Regional Director of Culinary

Noble Food & Pursuits is a chef-driven hospitality group based in Charlotte, North Carolina. Our restaurants are grounded in scratch cooking, thoughtfully sourced ingredients, disciplined technique, and genuine hospitality.

Each of our concepts has its own identity, but they share a commitment to craftsmanship, strong leadership, and memorable guest experiences. We are seeking a Regional Director of Culinary to lead culinary performance across our northern region, including Davidson, Winston-Salem, and Blowing Rock. This role reports directly to the Chief Culinary Officer and supports Executive Chefs across Rooster’s Wood-Fired Kitchen, The Jimmy, Noble Smoke, and Brasserie Copain.

The Role

The Regional Director of Culinary will work closely with Executive Chefs to strengthen leadership, improve execution, develop teams, and support consistent culinary standards throughout the region.

This is an active leadership role that requires strong culinary ability and real operational credibility. The right person will be comfortable working within our kitchens, understand scratch cooking, and be confident working with the ingredients, recipes, and techniques used throughout our concepts.

A major focus of this position is helping Executive Chefs excel. This leader should be able to coach, challenge, and support other chefs while building trust and leading by example.

At times, this position will serve as the acting Executive Chef during a planned or unexpected absence. In those situations, the Regional Director will assume responsibility for the full culinary operation for as long as coverage is needed, including daily leadership, staffing, preparation, service, ordering, inventory, food safety, and overall kitchen performance.

Success in this role means stronger Executive Chefs, more capable culinary teams, consistent kitchens, and continued regional growth without compromising the identity or standards of our concepts.

What You’ll Do

Lead culinary performance across multiple properties within the northern region

Provide direct leadership, coaching, and development to Executive Chefs

Help culinary leaders strengthen their teams, systems, communication, and daily execution

Build a culture of ownership, accountability, collaboration, and continuous improvement

Work alongside culinary teams to understand operations and provide practical, real-time coaching

Serve as the acting Executive Chef during planned or unexpected leadership absences when needed

Drive consistent execution while protecting the identity and integrity of each concept

Support recruiting, onboarding, retention, and long-term development of culinary talent

Oversee menu execution and support seasonal changes, recipe refinement, and culinary initiatives

Conduct regular property visits to assess food quality, organization, execution, and team performance

Partner with property leadership to strengthen overall restaurant performance and guest experience

Guide chefs in food cost, labor planning, inventory management, purchasing, and waste reduction

Maintain high standards for sanitation, food safety, cleanliness, and operational organization

Collaborate with the Chief Culinary Officer on regional strategy, culinary development, and continued growth

Travel regularly throughout Davidson, Winston-Salem, and Blowing Rock

What You’ll Bring

7+ years of progressive culinary leadership experience in high-volume or multi-unit restaurant environments

A strong culinary foundation rooted in scratch cooking, quality ingredients, and disciplined execution

Experience working with fresh, seasonal, locally sourced, and high-quality products

Proven ability to lead and develop Executive Chefs and high-performing culinary teams

The ability to coach, challenge, and inspire other chefs while building trust and credibility

The experience and confidence to assume full Executive Chef responsibility for a property when needed

Strong knowledge of kitchen operations, staffing, preparation, service, ordering, inventory, and food safety

A strong understanding of food cost, labor management, purchasing, waste control, and kitchen performance metrics

Experience working across multiple restaurant concepts or culinary styles preferred

Strong communication, organization, decision-making, and problem-solving skills

The ability to balance support and accountability while respecting established property leadership

A leadership style rooted in presence, collaboration, follow-through, and a genuine commitment to developing others
