Full Job Description

Manage daily operations of a commercial retail or wholesale bakery, including production (back of house) and front-of-house (FOH) customer service and retail operations. Ensure consistent product quality, efficient production, food safety, inventory control, staffing, cash and POS accuracy, scheduling, and excellent customer experiences.

Key Responsibilities — Back of House (production):

Oversee daily production schedules to meet retail, wholesale, and special orders.
Ensure product consistency via recipe adherence, portion control, and QC checks.
Hire, train, schedule, and evaluate bakers, pastry cooks, packers; mentor staff.
Monitor ingredient and packaging inventory; place orders, set par levels, minimize waste.
Maintain equipment via routine maintenance and coordinate repairs.
Implement and enforce food safety, sanitation, and HACCP/ServSafe standards.
Track KPIs: production yield, waste, on-time orders, inventory turnover; report to management.
Control labor and material costs; prepare/manage budgets and cost reports.
Support product development, testing, and seasonal launches.

Key Responsibilities — Front of House (customer-facing operations):

Oversee all FOH activities: counter service, display merchandising, order-taking, packaging for retail and takeout.
Manage POS systems and cash registers: ensure correct setup, daily cash reconciliation, deposits, and secure cash handling procedures.
Develop and enforce opening/closing checklists (cleaning, displays, cash counts, equipment warm-up/cool-down).
Supervise order flow: coordinate between FOH and production for timely order fulfillment and special/custom orders.
Create and manage staff schedules to cover peak times, breaks, and special events; adjust for seasonal demand and labor cost targets.
Train FOH staff on customer service, upselling, allergen awareness, menu/product knowledge, POS operation, gift-cards/loyalty programs, and handling refunds/voids.
Set standards for displays, labeling, pricing, and signage to maximize sales and maintain brand presentation.
Handle customer complaints, refunds, special requests, and escalations; follow up to ensure resolution and customer retention.
Coordinate online orders, phone orders, delivery/third-party platforms, and curbside pickup procedures; ensure accuracy and timely handoff.
Enforce local health, safety, and sanitation rules in FOH (handwashing, PPE, cross-contamination prevention).
Monitor FOH KPIs: average transaction value, ticket time, customer satisfaction, till discrepancies, and conversion rates.

Staffing & Training:

Recruit, onboard, and cross-train staff for both FOH and BOH to ensure flexibility.
Conduct regular performance reviews, coaching, and discipline when required.
Maintain training records and certifications (ServSafe or equivalent).

Operational & Administrative:

Maintain accurate records: schedules, inventory logs, HACCP/cleaning logs, sales reports.
Work with marketing/sales on promotions, seasonal menus, and wholesale customer needs.
Ensure compliance with all local regulations and maintain necessary permits and documentation.

Qualifications:

3–5+ years’ experience in bakery operations, production management, or retail management with bakery experience.
Strong knowledge of baking and retail service operations, POS/cash handling, and customer service best practices.
Experience with inventory management systems and basic food safety certification (ServSafe or equivalent).
Demonstrated leadership, scheduling, and team-management skills.
Financial acumen: budgeting, cost control, KPI analysis.
Ability to work early mornings, weekends, and holidays as required.

Preferred:

Experience with larger-scale production, retail bakery, or multi-channel order fulfillment.
Knowledge of allergen management and dietary production (gluten-free, vegan).

Physical & Work Environment:

Fast-paced, high-temperature environment; frequent standing, lifting (up to 50 lbs), bending, and repetitive motions.
FOH requires prolonged customer interaction and periods standing at service counters.

Pay: $18.00 - $21.00 per hour
