Full Job Description

AC’s Steakhouse Pub Hernando is currently looking for a culinary professional to join our award-winning team. We are only interested in candidates that are passionate about the food industry and understand the commitment it takes to excel in this industry. The position of Sous Chef is a hands-on position that requires line work, prep work, and administrative work. This position is responsible for assisting the Executive Culinary Team with all kitchen functions including food production and quality control; preparation and adherence of all product recipes; sanitation and cleanliness; recruitment, retention, and training of all culinary personnel. Additionally, this position will also be exposed to cost control / financial management and menu development as preparation for future advancement. This is a great position for someone wanting to become an Executive Chef. We are a scratch kitchen and this is the place you want to work if you are truly a chef or want to become a chef.

Duties & Responsibilities:

Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards.
Maintain proper staffing levels and employee relations including interviewing, hiring, evaluating, and disciplining culinary personnel.
Assist in the training of new kitchen employees.
Fill in where needed to ensure guest service standards and efficient operations.
Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.
Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following preventative maintenance programs.
Ensure that all products are ordered according to predetermined product specifications and received in correct unit count and condition and deliveries are performed in accordance with receiving policies and procedures.
Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures.
Manage labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met.
Oversee the training of kitchen personnel in safe operation of all kitchen equipment and utensils.
Responsible for training kitchen personnel in cleanliness and sanitation practices.
Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas.
Check and maintain proper food holding and refrigeration temperature control points.

Qualifications:

A minimum of 5 years of experience in varied kitchen positions including food preparation, line cook, fry cook and expediter.
Prefer at least 6 months experience in a similar leadership capacity.
Must be able to communicate clearly with Owners, Executive Chef, kitchen and dining room personnel and guests.
Be able to reach, bend, stoop and frequently lift up to 50 pounds.
Be able to work in a standing position for long periods of time (up to 12 hours).
Must be ServSafe (or equivalent) certified or able to acquire certification within 90 days of employment.
Must be computer literate.

Pay: $700.00 - $900.00 per week
