Overview
Pioneer College Caterers is seeking an energetic and detail-oriented Sous Chef / Production Manager to lead our culinary team in a dynamic, fast-paced environment at Hesston College in Hesston, KS. This pivotal role combines hands-on food preparation with strategic kitchen management, ensuring the highest standards of quality, safety, and efficiency. As a key leader in our culinary operations, you will oversee daily food production, supervise staff, and coordinate catering and banquet services to deliver exceptional dining experiences. Your passion for culinary excellence and team leadership will drive our success and elevate our reputation for fine dining and catering excellence.

Responsibilities

Lead and supervise the kitchen team, fostering a positive, collaborative environment focused on high-quality food production and service for lunch and dinner. Meal volumes are 300-350.
Oversee all aspects of food preparation, ensuring adherence to recipes, presentation standards, and food safety regulations.
Manage inventory control and ordering processes to maintain optimal stock levels while minimizing waste.
Procurement of all products for both the main cafeteria and coffee shop and the grill.
Coordinate banquet, catering, and special event food services, ensuring timely delivery and exceptional quality.
Develop menus in collaboration with Food Service Director, incorporating dietary considerations and customer preferences.
Implement shift management procedures, including staffing schedules, training sessions, and performance evaluations.
Enforce strict health and safety standards across all kitchen operations to ensure compliance with food handling regulations.

Qualifications

Proven experience in college or universioty ndining services with a strong background in food production and kitchen management.
Supervising experience with demonstrated leadership skills in a high-volume setting.
Extensive banquet experience and familiarity with catering operations.
Knowledge of dietary requirements and ability to accommodate special dietary needs.
Strong skills in inventory management, food safety protocols, and food handling procedures.
Excellent team management abilities with a focus on training, motivating, and developing staff.
Prior experience in restaurant or hospitality management is preferred; culinary certifications are a plus.
