Full Job Description

NOBU, the world-renowned Japanese Restaurant, is hiring for its Houston location. We are seeking a highly motivated and energetic professional to join our team.

JOB PURPOSE:

Responsible for the organization and procurement and of all food items that require cooking & storing. Should know and not limiting of all line stations’ responsibilities. Trains new, as well existing staff on an ongoing basis. Facilitates all food preparation of stations requiring various cooking methods, knife skills and organizing/procuring of ingredients for the restaurant. Follow all Restaurant Policies and Procedures.

RESPONSIBILITIES:

Supervise and oversee staff regarding all steps in the preparation of Nobu food menu items in all day-to-day work.
Oversees the daily operations of the kitchen, including menu development, inventory and purchasing of supplies, and cost control.
Ensures food quality meets Nobu Restaurant standards prior to being served.
Remains appropriately groomed and wearing the uniform provided.
To control all food storage activities to ensure that all food is kept in prime condition and a good method stock rotation is used in all areas and sections of the kitchen.
To ensure each section is controlling mise-en-place quality, quantity, and is storing it correctly.
To carry out monthly training sessions with all your team in line with your departmental SOP manuals, maintaining all training records, which must be signed and kept up to date.
To ensure the kitchen team is giving an efficient, smooth, and quick service while maintaining principles and standards set by the company.
Organize the cooking line for safety and efficiency.
Additional related duties as requested by the Executive Chef/Nobu leadership.

Non-Physical Qualifications:

Fair and firm management abilities. Hands-on approach to all operational aspects.
Must have good communication, math and reading skills.
Computer skills in Microsoft Word, Excel, PowerPoint, and R365
TX Food Manager Certification required.
Culinary Arts degree recommended.
At least 3 years cooking experience in high-volume fine dining.

QUALIFICATIONS:

Ability to work from a standing position for extended periods of time.
Ability to lift approximately 40-50 pounds.
Ability to perform reaching, stooping, and/or crouching motions repeatedly.
Dexterity in the hands and fingers needed to effectively manipulate the tools and utensils used in food preparation.
Visuals abilities (closeness & depth perception) to ensure quality food preparation and personal safety with various types of equipment.
Physical tolerance for a minimum 40 hours of work a week but can exceed this based on business needs.

Job duties and responsibilities listed are a general outline. You may be required to perform other duties assigned by management depending on Nobu location.
