CHEF INSTRUCTOR

Brownsville Community Culinary Center (BCCC)

About BCCC

The Brownsville Community Culinary Center (BCCC) provides free, world-class culinary workforce training that creates pathways to employment, economic mobility, and long-term career advancement. Through hands-on training, industry certifications, internships, and employer partnerships, BCCC prepares aspiring culinary professionals to enter and thrive in New York City's hospitality industry.

Position Summary

BCCC is seeking an experienced, highly skilled Culinary Instructor to train and prepare participants for successful careers in professional food service and hospitality environments.

This is not a recreational cooking position. The Culinary Instructor is responsible for developing industry-ready culinary professionals by teaching technical cooking skills, kitchen operations, food safety, professionalism, teamwork, speed, efficiency, consistency, and workplace accountability.

The ideal candidate brings substantial professional kitchen experience and understands how to replicate the expectations, pace, and standards of a commercial foodservice operation while providing supportive instruction and mentorship to adult learners.

The Culinary Instructor serves as both educator and industry mentor, ensuring participants graduate prepared to perform successfully in restaurants, catering operations, institutional foodservice, healthcare kitchens, and other hospitality settings.

Key Responsibilities

Instruction & Training

Deliver hands-on culinary instruction aligned with workforce development outcomes.
Teach knife skills, cooking methods, food production, recipe execution, kitchen mathematics, menu planning, inventory awareness, and professional kitchen operations.
Train participants to execute recipes accurately, efficiently, and consistently.
Reinforce industry standards for mise en place, station organization, time management, and workflow.
Develop participant understanding of quality control, portioning, food cost awareness, and waste reduction.
Incorporate industry terminology and professional kitchen communication into daily instruction.
Prepare participants to earn industry-recognized food safety certifications.

Workforce Readiness & Professional Development

Model and reinforce workplace expectations including punctuality, professionalism, accountability, communication, teamwork, and reliability.
Evaluate participants on both technical performance and professional behavior.
Provide coaching, feedback, and corrective instruction to support participant growth.
Support participants as they prepare for internships, employment opportunities, and career advancement.
Collaborate with case managers, workforce staff, and employer partners to support participant success.

Kitchen Operations & Food Safety

Maintain an instructional kitchen that reflects professional industry standards.
Ensure strict compliance with NYC Department of Health regulations and food safety protocols.
Teach and enforce sanitation, personal hygiene, allergen awareness, temperature controls, and HACCP-based practices.
Monitor participants to ensure safe use of equipment and proper food handling procedures.
Maintain cleanliness, organization, and operational readiness of all kitchen facilities and equipment.

Program Administration

Track attendance, participant progress, competency attainment, and certification readiness.
Assist with curriculum development and continuous program improvement.
Maintain instructional records and required documentation.
Participate in staff meetings, professional development activities, community events, and special projects as assigned.

Qualifications

Required

NYC Food Protection Certificate.
Minimum five (5) years of professional culinary experience in restaurants, catering, hospitality, institutional foodservice, healthcare foodservice, or related culinary environments.
Minimum two (2) years of supervisory, lead cook, sous chef, executive chef, or culinary training experience.
Demonstrated mastery of food safety, sanitation, and kitchen operations.
Strong understanding of workforce readiness and professional workplace expectations.
Excellent communication, coaching, and classroom management skills.
Ability to train individuals with varying levels of experience and educational backgrounds.
Commitment to serving diverse communities and supporting participant success.
Ability to stand for extended periods and lift up to 50 pounds.

Preferred

Culinary degree or equivalent formal culinary training.
ServSafe Manager Certification.
Experience teaching in workforce development, vocational training, apprenticeship, or adult education programs.
Experience managing high-volume food production environments.
Experience mentoring culinary staff or training entry-level employees.
Bilingual (Spanish/English) preferred.

Compensation

Salary: Competitive and commensurate with experience.

Schedule: Part-Time, including occasional evenings, weekends, and special events as required.
