Full Job Description

At Excursion Restaurant, we believe in quality, especially in our kitchens. In our award-winning fine-dining kitchen, we prepare the majority of our food from scratch. We use local Alaska products when possible, grow seasonal gardens, and serve innovative and exciting cuisine to both our guests and our staff.

Chefs in our kitchens are professionals who work closely together as a team to create seasonal menus that are some of the most innovative cuisines served in Alaska.

Our chefs are part of our leadership and management teams. We look for chefs who can contribute to our guests’ Alaskan adventure through insightful cooking demos, inspiring cuisine, and a passion for infusing the local food narrative into each dish. A strong candidate can work in a remote environment, exhibit advanced professional skills, and take pride in “at-the-stove” work. Chefs must prepare three meals daily for guests and staff and be proficient in catering to specific dietary restrictions.

Chefs must have good people skills and get along with peers. Fine dining cuisine and knowledge of cooking and filleting fish is very important.

As we are very remote, inventory of product is crucial, and the ability to improvise is necessary. A passion for hands-on cooking is very important.

Responsibilities Include:

Collaborates with the head chef to direct food preparation.
Helps design the food and drink menu.
Produces high-quality plates, considering both design and taste.
Oversees and supervises the kitchen staff.
Assists with menu planning, inventory, and supply management.
Prepare staff meals
Covers for other chefs on days off
Keeps stations clean and complies with food safety standards.
Monitors and maintains kitchen equipment.
Offers suggestions and creative ideas that can improve the kitchen’s performance.

Free room and board isprovided as part of your compensation package. There is limited employee housing at our lodge, and employees are required to share a room with another staff member of the same sex. There is the occasional compelling exception to offer an employee a private room.

An end-of-season bonus is also provided based on profit and productivity.

LIFE IN BUSH ALASKA

We are a remote upscale luxury lodge on over 100 acres of wilderness, surrounded by national park and state lands. Life in Alaska can be a transition for those who have never lived in a rustic environment. There are no movie theaters, bars, or shopping malls. The nearest town is 6 miles away down a dirt road. Bush Alaska means changing how you think about everything. Being prepared and planning is the number one rule. If you run out of supplies, there is no Walmart to restock.

Meals are shared at regular times, prepared by our talented chefs. We strive to accommodate food sensitivities whenever possible. However, in our remote setting, it can be challenging to meet every dietary preference at every meal. If you’re vegan or have special dietary needs, we recommend bringing extra snacks or alternative options to make sure you’re comfortable. We do our best to help everyone feel at home!

As with any small remote community, the lodge enforces rules and regulations so that we can remain organized and professional. We have a strict no-drugs policy. We do not center our social activities on alcohol. We enjoy mentally and physically challenging ourselves to explore new areas of the backcountry and learn new skills.

We have plenty of fun, and employees leave with new friends and lifelong memories. We need a committed team member who can fully focus on the lodge and the work at hand. This is not a good job for someone who wants to tour Alaska or have a great deal of private time.
