Head Chef wanted for Lower Keys landmark restaurant. Mangrove Mama's is one of the oldest buildings in the Keys, located at MM20. The new owners began rebuilding 3 years ago, and we are now growing rapidly and are seeking a qualified and responsible individual for a long-term position as Head Chef. This is a unique opportunity to work with a veteran Executive Chef and take over a well-run and growing business.
We are seeking a low drama individual, the right person knows how to work under pressure without losing their cool. Must speak fluent English as well as have the ability to speak passable kitchen Spanish or Haitian Creole, or the ability to use a translator throughout the day.
The perfect candidate will have a culinary degree or a minimum of 4 years kitchen management experience as Sous Chef or above. Must be quality minded with attention to detail. Must be able to manage others and take full control of the kitchen. Must be able to perform any kitchen function. Must be willing to learn and grow. Must have a valid food handler card. Must have reliable transportation. Must be able to maintain current standards and execute recipes as directed. Must have general computer skills with Microsoft applications.
Job Responsibilities:
Purchasing, Scheduling, Daily Specials creation, Daily Kitchen Management, manage daily prep lists, Attention to Safety and Sanitation, Menu development including the ability to edit and print in Power Point, Costing, and all other things related to daily Kitchen Management.
Salary is negotiable depending on experience. Working hours/days off are also negotiable, however the position will require evenings, weekends and a standard 50-hour work week (five 10 hour days). Due to the purchasing schedule, this position generally has Tuesday and Wednesday off.

Pay: $75,000.00 - $90,000.00 per year
