Full Job Description

Position Overview

The Sous Chef supports the Chef de Cuisine/Executive Chef in managing daily food service operations within a high-volume corporate dining environment. This role focuses on delivering consistent, high-quality meals in a cafeteria-style setting while maintaining strict adherence to company policies, food safety standards, and operational procedures.

The Sous Chef is responsible for supervising staff, enforcing kitchen rules, managing inventory and receiving, and ensuring efficient, compliant back-of-house operations.

Key Responsibilities

Operational Leadership

Assist in overseeing all daily kitchen operations in a high-volume, fast-paced cafeteria environment
Execute standardized recipes and ensure consistent food quality, portion control, and presentation, including, tasting quality of food, and maintaining high standards
Lead kitchen operations in the absence of the Chef de Cuisine, oversee Lead Cook and make sure they're also doing their job
Ensure timely production and service for multiple stations (grill, hot line, deli, salad bar, etc.)
Maintain organization, cleanliness, and efficiency throughout the kitchen

Team Supervision & Rule Enforcement

Supervise, train, and mentor kitchen staff, including cooks and utility workers
Enforce company policies, safety standards, uniform compliance, and kitchen procedures consistently, phone policies
Hold staff accountable for performance, attendance, and adherence to workplace rules
Assist with labor management, and shift assignments
Promote a professional, respectful, and team-oriented kitchen culture

Inventory Management

Monitor and maintain accurate inventory levels of food, supplies, and equipment
Perform routine inventory counts (daily/weekly/monthly as required)
Track product usage and identify variances or waste issues
Support cost control initiatives by minimizing waste and ensuring proper product utilization
Maintain organized storage areas (dry, refrigerated, and frozen)
Receive product, from vendors and ensure that invoices are correct and all products were received

Receiving & Purchasing

Receive and inspect all deliveries for quality, accuracy, and compliance with purchase orders
Verify temperatures, expiration dates, and product condition upon arrival
Reject unacceptable products and coordinate with vendors for corrections
Ensure all items are properly labeled, dated, and stored immediately following FIFO procedures
Assist in ordering and maintaining par levels based on business needs

Food Safety & Compliance

Enforce all food safety and sanitation standards (HACCP, OSHA, and company guidelines)
Ensure proper food handling, labeling, allergen control, and storage practices
Maintain readiness for health inspections and corporate audits
Conduct routine safety and sanitation checks throughout shifts

Menu Execution & Production

Assist in menu planning and daily production for cafeteria-style service
Support special functions, catering events, and corporate meetings as needed
Ensure availability and quality of all menu offerings during service hours
Adjust production levels based on customer volume and demand

Qualifications

2–5+ years of experience in a supervisory kitchen role, preferably in corporate dining, healthcare, or institutional foodservice
Strong understanding of high-volume food production and cafeteria-style service
Experience with inventory control, receiving, and cost management
Knowledge of food safety standards (SERV Safe certification preferred or required)
Proven leadership and team management skills
Strong organizational and communication abilities
Ability to enforce policies and maintain structure in a team environment
Fluent in English and Spanish preferred

Physical Requirements

Ability to stand for extended periods
Ability to lift up to 50 lbs.
Ability to work in a fast-paced, high-volume kitchen environment

Work Environment

Corporate dining facility or cafeteria setting
Structured schedule (may include early mornings or daytime shifts, depending on operation, some weekend work if executive team has need for it)
Focus on consistency, efficiency, and compliance rather than à la carte service
