About Us

BOPOMOFO Café is a modern Taiwanese-American café with five locations across Southern California, known for its craft boba teas and thoughtfully made food. Our newest venture, BOPO GO!, is a boutique convenience store and boba shop at Downtown Disney, offering curated Asian snacks, chef-made reinterpretations of convenience classics, and freshly prepared hot foods.

We’re seeking an Executive Sous Chef to oversee commissary production, support and grow Bopomofo’s culinary program, and help build and execute the new BOPO GO! food program alongside our Executive Chef.

Core Responsibilities

The role of the Sous Chef centers around 6 Core Responsibilities:

1. BOPOMOFO Café

Support food production and menu execution for five BOPOMOFO Café locations (San Gabriel, Artesia, San Diego, Hollywood, Irvine).
Ensure consistency and quality across café offerings while aligning with brand identity.

2. BOPO GO!

Oversee production of signature snacks and grab-and-go items unique to BOPO GO!
Collaborate with the Executive Chef to bring the BOPO GO! brand vision to life: nostalgic convenience-store classics elevated with Taiwanese and pan-Asian flavors.

3. Commissary Kitchen

Manage and execute the logistics of daily high-volume food production to support all Bopomofo and BOPO GO! locations.
Translate recipes into scalable batch production plans, adjusting yields and prep lists as needed.
Oversee packaging, labeling, storage, and distribution to maintain freshness, quality, and compliance.

4. Menu Development

Collaborate with the Executive Chef on new dish ideation, recipe testing, and seasonal rollouts.
Standardize recipes to ensure scalability and operational efficiency.
Evaluate ingredient sourcing, food costs, and labor requirements to balance creativity with profitability.
Conduct tastings and staff training to guarantee menu consistency and guest satisfaction.

5. Staff Development

Recruit, onboard, and train commissary and kitchen staff to uphold BOPO GO! and Bopomofo standards.
Mentor team members, fostering growth and cross-training opportunities.
Manage scheduling, delegation, and workflow to ensure efficiency and accountability.
Build an inclusive, collaborative kitchen culture where staff feel supported and empowered.

6. Food Costing

Monitor and control food costs to meet budget goals.
Calculate recipe and batch costs; track inventory and reduce waste.
Work with vendors to source cost-effective ingredients and supplies.
Support menu pricing and development with profitability in mind.

Qualifications

Proven experience as a Sous Chef, Kitchen Manager, or senior role in a high-volume or commissary kitchen.
Experience leading teams, scaling recipes, and balancing creativity with operational efficiency.
Skilled in both savory and pastry/prep workflows.
Culinary degree or equivalent training a plus, but not required.

Desired Attributes

Hands-on, collaborative leader with a passion for menu innovation and brand storytelling.
Comfortable with spreadsheets for P&L, Recipe Costing, Production, and general planning.
Strong knowledge of Taiwanese and pan-Asian flavors with enthusiasm for reimagining nostalgic foods.

Requirements

Ability to stand and walk for extended period (up to 8-10 hours)
Ability to lift, carry, push, and pull up to 50lbs
Ability to bend, kneel, crouch, climb ladders, and reach overhead
Ability to work in hot, cold, and humid environments including commercial kitchens, walk-in coolers, and freezers
Comfortable performing repetitive motions such as chopping, stirring, scooping, or operating equipment
Available to work a flexible schedule, including mornings, evenings, weekends, holidays, and special events as business needs require
Available to work overtime or extended shifts during peak business periods may be requested
