Position Summary

The Sous Chef is responsible for and supervises the preparation and standards of all foods. The Sous Chef provides guidance to all their team, ensuring all foods are prepared as per the standards specified by the Chef and CRYC. The Sous Chef realizes the importance of food and labor costs, is a good organizer, and always strives to obtain the maximum efficiency as well as shares their knowledge and abilities with others. This position is the liaison point between line chefs and the head chef and are very involved with the day-to-day running of the kitchen and its staff.

Essential Functions

Assist in overseeing the day-to-day operations of the kitchen, including food preparation, cooking, and plating.
Lead and inspire colleagues to reach their full potential through thorough training, follow up and setting the standards of excellence by practicing the same at all times.
Ensure that the wants and needs of members and guests are consistently exceeded.
Collaborate with the Chef to manage food costs, monitor inventory levels, minimize waste, and ensure effective portion control.
Help with the preparation and design of all food and drink menus.
Produce high quality plates both in design and taste.
Ensure that the kitchen operates in a timely way that meets or exceeds our quality standards.
Resourcefully solve any issues that arise and seize control of any problematic situation.
Order supplies to stock inventory appropriately.
Maintain a positive and professional approach with coworkers and members.
Maintain rigorous quality control throughout the kitchen.
Constantly monitor food storage areas and refrigerators to ensure that food spoilage is kept to a minimum. All incidents of food wastage are to be reported immediately.
Willing to adjust, be flexible and responsive to member requests in menu selections.
Ensure that all equipment is properly maintained and report any issues to the Chef.
Participate in regular training and professional development to enhance culinary skills.
Maintain a positive and collaborative work environment within the kitchen.
Follows standard recipes for all dishes to ensure proper portion control, uniformity of taste and quality.
Perform portion control and minimize waste to keep costs within forecasted range.
Ensure that all dishes are prepared in a timely manner by restocking ingredients at workstation and meeting prep times to ensure smooth delivery.
Plate prepared foods based on Chef’s guidance.
Must demonstrate appropriate analytical skills, attention to detail, organizational and time management skills.
Monitor food storage and product rotation to ensure the highest quality of food being served.
Assist Chef and kitchen personnel in accomplishing closing duties and kitchen cleanliness.
Ensure that their station is clean and that all food items are properly covered and stored at the end of shift.
Continually look for opportunities to improve the kitchen operation for the staff and members alike.
Participate in daily meetings.
Ensure all legal requirements are consistently followed including state, or local laws for food safety.
Assist other kitchen personnel in food preparation and side work as assigned by the Chef.
Monitor and maintain employee dress codes according to policies and procedures.
Perform all other tasks and projects as assigned.

Qualifications

High School diploma or GED; 4 years’ experience in culinary, food and beverage or related professional area OR 2-year degree from an accredited university in Culinary Arts, Hotel & Restaurant Management or related major; 2 years’ experience in culinary, food and beverage or related professional area required.
Exceptional culinary skills with a deep understanding of fine dining cuisine.
Ability to communicate clearly with managers, kitchen and dining room employees, members and guests.
Knowledge of various cooking techniques and culinary fundamentals required.
Familiarity with kitchen equipment and utensils required.
Ability to work in a fast-paced, high-pressure environment required.
Ability to read and follow cooking directions required.
Attention to detail and a commitment to food safety and sanitation required.
Current food safety certification preferred.
Current CPR Certification required.
Knowledge of and ability to perform required role in emergency situations required.
Ability to work a varying schedule based on the Clubs’ needs required. This schedule includes nights, weekends, and holidays.
