Full Job Description

Role Expectations:

Provide the highest level of comfort and service to Guests, as per Viking’s STAR Service Standards; positively contribute to Viking Mississippi’s Key Performance Indicators (KPIs) and company goals and objectives.
Ensure Viking’s policies, procedures, and brand standards are followed; contribute to product and service developments and enhancements.
Coordinate all FandB orders with section heads and partner with the Inventory Manager and shoreside Purchasing to ensure fiscally responsible orders are placed, factoring in budgetary guidelines, par levels, consumption reports, and storage space; manage to our FandB PPD budgetary guidelines.
Comply with all Public Health, Environmental and Safety and Security requirements and ensure the Viking Mississippi exceeds these standards, participate in all required training.
Minimize equipment loss/damage; participate in loadings and waste management.
Provide competent leadership to all direct reports. Responsibilities include, but are not limited to, training and development of team members, succession planning, conducting performance reviews, managing progressive disciplinary process when needed, crew communication and recognition, hosting The Daily Reunion to provide feedback and operational updates and to ensure your department is performing to Viking’s STAR Service Standards.
Through the Executive Chef and team, ensuring all menus, recipes, methods, and specifications are followed and are in line with Viking’s menu cycles and culinary matrix.
Oversee our Restaurant, River Café, Explorer lounge, and Aquavit bar service during mealtimes. Interact with guests and follow up on any concerns raised.
Prioritize our crew menu cycle to ensure our crew’s dietary and nutritional needs are met.
The Food and Beverage Manager must demonstrate outstanding flexibility: able to work different times of the day, under pressure, always reflect a positive can-do attitude, and the best image of Viking.
Uphold impeccable grooming standards by complying with Viking’s Image and Uniform Standards
Other tasks and responsibilities may be assigned at the leaders’ discretion based on operational needs.

About You

3+ years’ experience as a manager within a 5-star hospitality food and beverage environment; shipboard experience is an advantage
Guest-focused, service-oriented, positive attitude. Hands-on management style, prepared to work alongside the team and assist where necessary.
Passionate about developing our product, improving our service levels, and guiding and mentoring our team members.
Proven track record of compliance in exceeding public health standards and requirements
Must have experience in leading diverse teams, be flexible, and be able to operate in high-stress environments, and be a committed team player.
Strong administration skills including practical knowledge of Microsoft Word, Microsoft Excel, and Point of Sales systems. MXP database

Mandatory requirements and at-will employment

U.S. Citizen or Permanent Resident (green card) to work onboard the ship, as required by federal regulations

Must be 21+ years old, physically fit, and in good health to meet the demands of an intense shipboard role; must be able to carry heavy items and stand, kneel, and bend for prolonged periods of time
