Full Job Description

The Role

The Bar Manager runs every aspect of our beverage operation: the menu, inventory, financials, and most importantly, the people. You'll spend a significant portion of your week behind the bar working service alongside your team, and the rest of it building the systems that make that service consistent. This is a hands-on leadership position.

What You'll Do

Beverage Program

Develop, test, and launch seasonal cocktail menus that reflect our gin-forward, botanical identity
Write and maintain specs, batching procedures, and prep guides so every drink is identical regardless of who builds it
Manage house-made syrups, tinctures, infusions, and garnish programs, including production schedules and shelf-life tracking
Curate the spirits, wine, beer, and non-alcoholic lists, emphasizing gin depth

Operations & Financials

Own bar inventory: par levels, ordering, receiving, weekly counts, and waste tracking
Hit and maintain target pour cost and beverage cost percentages; identify and correct variance
Build and manage vendor and distributor relationships, negotiate pricing, and evaluate new products
Cost out every menu item and price for margin without compromising quality
Maintain bar equipment, ice program, and glassware inventory; coordinate repairs and replacements

Team Leadership

Recruit, hire, train, and develop bartenders and barbacks
Run regular staff trainings on technique, product knowledge, and new menu rollouts
Set and hold standards for bar cleanliness, organization, and mise en place
Conduct performance check-ins and handle coaching and discipline within labor targets
Partner with the kitchen and front-of-house leadership so bar and dining service run as one operation

Guest Experience & Compliance

Work service — you're on the floor and behind the bar during peak hours (option to work for tips)
Handle guest issues directly and recover situations with grace
Enforce responsible alcohol service, ID verification, and Wisconsin liquor law compliance
Maintain health code and sanitation standards; prepare the bar for inspections
Support private events, buyouts, and cocktail features as needed

What We're Looking For

Required

5+ years in the hospitality industry, with at least 2 years in a bar lead, head bartender, or bar manager role
Demonstrated experience in a high-end craft cocktail program — classic technique, balance, dilution, batching, and precise execution under volume
Deep spirits knowledge, particularly gin, amari, and modern aperitifs; ability to speak to production methods and botanical profiles
Proven menu development experience, from concept through costing to launch
Strong grasp of bar financials: pour cost, inventory variance, labor cost, and P&L literacy
Experience hiring, training, and managing a bar team
Ability to obtain a City of Madison Operator's (bartender's) License
Availability for nights, weekends, and holidays — our schedule runs Tuesday through Sunday, including late night and weekend brunch
Comfortable with POS systems and inventory platforms

Preferred

Experience opening a bar program or executing a full concept relaunch
Wine and beer program experience in a fine dining context
ServSafe Manager and responsible beverage server certification already in hand
A working knowledge of botanicals, herbs, and seasonal produce
