Responsabilidades Principales

Apoyar al Chef Ejecutivo en la supervisión diaria de la cocina.
Supervisar cocineros de línea, personal de preparación y el personal de apoyo en cocina para mantener altos estándares de desempeño.
Colaborar en el desarrollo de menús, incluyendo actualizaciones de temporada y especiales del día.
Monitorear inventarios, pedidos y almacenamiento de alimentos.
Asegurar de que todas las estaciones estén limpias, organizadas y correctamente abastecidas antes, durante y después del servicio.
Asegurar cumplimiento con regulaciones de sanidad y seguridad alimentaria.
Proporcionar formación, capacitación y retroalimentación sobre el rendimiento al personal de cocina (BOH.)
Liderar la cocina en ausencia del Chef Ejecutivo.
Apoyar la ejecución de eventos especiales y catering.
Monitorear el control de porciones, minimizar el desperdicio y ayudar a mantener operaciones eficientes en costos.

Requisitos y Habilidades

Apariencia profesional y puntualidad.
Capacidad de trabajar largas horas y estar de pie por periodos extendidos.
Resistencia física para levantar hasta 50 libras.
Habilidades de liderazgo, organización y comunicación.
Conocimiento de normas de seguridad y protocolos de alérgenos.
Bilingüe en inglés y español preferido.
Actitud proactiva, orientada a soluciones y con espíritu de trabajo en equipo, orientado al servicio al cliente extraordinario.

Calificaciones

Mínimo 5–7 años de experiencia culinaria profesional, incluyendo al menos 2–3 años en un rol de supervisión o Sous Chef en un entorno de alta cocina o en un complejo turístico de lujo.
Capacidad demostrada para gestionar un equipo en una cocina de alto volumen y ritmo rápido.
Certificación en seguridad alimentaria (SERV-Safe o equivalente).
Fuerte comprensión de la gestión de inventarios, pedidos y control de costos.
Experiencia en el desarrollo de menús y ejecución de eventos.

Condiciones de Trabajo

Entorno de cocina de ritmo rápido que requiere flexibilidad y resistencia.
Pueden requerirse horas extendidas durante las temporadas altas o eventos grandes.
Esta posición requiere disponibilidad total para trabajar los fines de semana, días festivos y períodos prolongados según sea necesario para apoyar las operaciones y eventos de Moncayo.
