In a high-volume kitchen like TAP21, a dishwasher is much more than someone who washes dishes. They are a critical part of keeping the kitchen running efficiently. A strong dishwasher helps the entire kitchen stay clean, organized, and compliant with health department standards.

Here are the typical job duties:

Primary Responsibilities

Wash dishes, glassware, pots, pans, sheet trays, and utensils quickly and thoroughly.
Operate the commercial dish machine properly.
Scrape, rinse, and sort dirty dishes before loading.
Inspect cleaned items to ensure they’re sanitized and spotless.
Put away all clean dishes and kitchen equipment in the correct locations.

Kitchen Cleanliness

Keep the dish area clean, organized, and free of clutter.
Empty trash and recycling throughout the shift.
Sweep and mop kitchen floors regularly.
Clean floor mats.
Keep drains clean and free of debris.
Clean sinks, dish machine, and surrounding work area.

Equipment Cleaning

Wash grills, fryer baskets, inserts, and cooking equipment.
Clean prep tables and shelving as directed.
Assist with nightly cleaning of kitchen equipment.
Delime and clean the dish machine according to schedule.

Food Prep Assistance (when caught up)

Depending on the restaurant, a dishwasher may also:

Peel potatoes.
Wash and cut vegetables.
Portion sauces or dressings.
Restock prep stations.
Refill sanitizer buckets and towels.
Put away food deliveries.

Stocking Duties

Restock plates, bowls, silverware, and glassware.

Closing Duties

Empty all trash.
Sweep and mop the kitchen.
Clean the dish machine.
Sanitize sinks and counters.
