Hi-Wire Brewing is a rapidly growing brewery based in Asheville, NC, specializing in approachable and balanced lagers and ales. Since opening our first location in 2013, our hard-working, creative, and passionate team has been recognized with several accolades, including 3 Gold medals from the Great American Beer Festival, 2 Silver and 1 Bronze Medal from the World Beer Cup, and several awards from Paste Magazine and the NC Brewers Cup. Position Description
The Cellar Lead at Hi-Wire Brewing is responsible for ensuring the highest quality product is released to packaging in a timely fashion. The ideal candidate will manage, with input from other departments, the coordination of the department's production and personnel scheduling, participate in safety, quality, and maintenance planning, and ensure all administrative functions are being completed on time. This is a permanent full-time position. This position reports to the Head of Brewing and Innovation.
Responsibilities
- Lead day-to-day cellar operations; translate the production schedule into daily task lists, communicate expectations to the team, and make real-time decisions about task loads and schedule changes.
- CIP transfer lines and CIP/SIP tanks and vessels; transfer beers as scheduled using a Westfalia centrifuge with inline carbonation.
- Complete fermentation checks (gravity, pH, temperature); perform basic QC lab work; add ingredients to fermenting or finished beer in a sanitary and efficient manner.
- Oversee all yeast-related tasks, including cell counts, viability checks, harvest, and disposal of excess yeast; plan to ensure a viable yeast source is available for weekly brewing.
- Oversee cleaning of cellar areas and equipment; ensure ongoing maintenance of machinery for safe and efficient operation, involving the maintenance team as needed.
- Create, maintain, and audit all SOPs and checklists; drive continual improvement by anticipating needs, troubleshooting problems, and contributing to efficiency and quality initiatives.
- Monitor and look for ways to reduce losses and waste within the cellar area.
- Coordinate with the Head of Brewing and Innovation on workflow and scheduling; notify the packaging crew when beer is ready; participate in safety and maintenance programs.
- Complete other tasks accurately as assigned by management within specified time frames.

- At least 2 years of experience in a production brewery
- Knowledge of cellar program
- Writing and math skills
- Exceptional time management, multitasking, and prioritizing skills

- A flexible schedule with the ability to work nights and weekends
- Strong overall understanding of safety procedures, regulations and requirements, including forklift operation
- Physical Requirements:
- Must be able to continually lift 65 pounds
- Must have the ability to regularly stand, walk, use hands, reach, climb, work from heights, stoop, kneel and crouch
- The ability to work near moving parts and machinery
- The ability to work in loud, wet, cold, hot, indoor and outdoor environments frequently
