Seeking an Executive Chef at Pepaj Restaurants

Pepaj Restaurants is seeking a dynamic and accomplished Executive Chef to lead one of the Space Coast's premier, upscale dining destinations. This person must be a passionate culinary leader with a refined palate, strong operational expertise, and a commitment to excellence who is ready to shape the next chapter of our restaurant's success.

Job Summary

In this pivotal role, you will oversee all aspects of kitchen operations, from menu development and food preparation to team management and quality assurance. Your expertise will ensure that every dish served reflects excellence, creativity, and adherence to the highest standards of food safety and sanitation. As a leader in our hospitality environment, you will foster a positive team culture, drive operational efficiency, and deliver memorable dining experiences that delight our guests.

Responsibilities

Lead and supervise the culinary team, ensuring effective shift management, training, and motivation to maintain high-performance levels.
Place all kitchen food orders and effectively control costs by working with our Xtrachef platform.
Develop innovative specials that align with quality and brand standards.
Schedule kitchen staff based on demand and night of week or holidays. Anticipate kitchen production needs in advance.
Oversee all food production activities, including food handling, preparation, presentation, and serving to ensure consistency and quality.
Manage inventory control and procurement processes to optimize stock levels, reduce waste, and maintain budget targets.
Enforce strict food safety sanitizing procedures and hygiene standards across all kitchen areas to ensure compliance with health regulations.
Coordinate catering events, banquets, and special functions with attention to detail in planning, execution, and presentation.
Monitor kitchen operations for efficiency improvements, cost control measures, and adherence to company policies.
Collaborate with ownership on menu planning, pricing strategies, and customer feedback to enhance overall dining experiences.

Requirements

Minimum of 5 years in a kitchen leadership role
Supervising experience leading culinary teams within hospitality or restaurant settings.
Demonstrated ability in inventory management, cost control, and food service management practices.
Strong leadership skills with the ability to motivate teams while maintaining high standards of quality and safety.
Excellent skills in menu planning, food preparation, cooking techniques, and restaurant management.
Familiarity with the food industry’s best practices for inventory control and kitchen operations.
