Ballyhoo Hospitality Group is seeking a talented, culinary and hospitality Prep Cook to join our team at Pizza By Sal in Wilmette.

Concept Overview: Pizza By Sal is a Ballyhoo Hospitality concept dedicated to classic East Coast pizza traditions. The menu focuses on simple, high quality ingredients and time honored techniques. Dough is made with King Arthur flour and topped with California plum tomatoes, premium mozzarella, and Sicilian olive oil to create pizzas that are both authentic and craveable.

The restaurant captures the spirit of a neighborhood pizzeria where guests gather for slices, whole pies, and familiar Italian American favorites. The atmosphere is casual, energetic, and welcoming, making Pizza By Sal a destination for everything from quick meals to relaxed evenings with friends.

Job Summary: The Prep Cook is responsible for preparing ingredients and components needed for daily kitchen operations while maintaining the highest standards of quality, consistency, organization, and food safety. This role works closely with the culinary team to ensure the kitchen is properly prepared for service and that all production is completed accurately and on schedule.

The ideal candidate is organized, dependable, detail-oriented, and able to work efficiently in a fast-paced restaurant environment while maintaining a positive and team-oriented approach.

Essential Responsibilities

Prepare ingredients and food items according to recipes, production sheets, and established culinary standards.
Perform a variety of preparation tasks including chopping, slicing, dicing, peeling, portioning, mixing, marinating, and basic cooking.
Prepare sauces, dressings, stocks, soups, marinades, vegetables, proteins, and other components as assigned.
Accurately measure and portion ingredients to maintain consistency and control food costs.
Follow daily and weekly production schedules and prioritize tasks according to business needs.
Maintain proper labeling, dating, storage, and rotation of all food products using FIFO procedures.
Ensure all prepared ingredients meet quality, freshness, portion, and presentation standards.
Assist cooks and chefs with mise en place and preparation prior to service.
Communicate with culinary leadership regarding production needs, ingredient shortages, or quality concerns.
Maintain clean, organized, and properly stocked work stations throughout the shift.
Clean and sanitize equipment, tools, work surfaces, and storage areas according to established standards.
Follow all food safety, sanitation, allergen, and temperature-control procedures.
Properly handle, store, and transport food products to prevent contamination and food waste.
Assist with receiving and properly storing deliveries when needed.
Monitor product quality and communicate any concerns to the appropriate member of the culinary team.
Minimize food waste through proper preparation, portioning, storage, and product rotation.
Perform additional duties as assigned by the Chef or culinary leadership.

Qualifications

Previous restaurant or food preparation experience preferred.
Culinary education or training is a plus.
Basic knowledge of food preparation and kitchen safety.
Ability to follow recipes, production lists, and verbal instructions.
Strong organizational and time-management skills.
Ability to work efficiently in a fast-paced, high-volume environment.
Strong attention to detail and commitment to consistency.
Ability to work effectively as part of a team.
Maintain Food Handles certification.
Ability to stand for extended periods and safely lift and carry food products and kitchen equipment.
Ability to work flexible schedules, including evenings, weekends, and holidays as business needs require.
