Job Summary

We are an established award winning Native American restaurant looking to grow and expand our restaurant. We are seeking a passionate, skilled, and leadership-driven Chef to direct our kitchen operations. In this role, you will be responsible for creating innovative menus, supervising kitchen staff, and ensuring that every dish leaves the kitchen meeting our strict standards for taste and presentation, interacting with guests, and participating in media segments/interviews. The ideal candidate combines culinary artistry with strong administrative and operational skills to maintain inventory, control food costs, and enforce flawless kitchen sanitation.

Core Duties and Responsibilities

Culinary Excellence: Develop, test, and refine appetizing menu items that align with the restaurant's brand and seasonal availability. Continue to consistently cook award winning dishes and develop and innovate new Indigenous recipes that appeal to, and inspire, new and regular customers. Adapt to current culinary trends with an Indigenous twist.
Kitchen Supervision: Direct, mentor, and coordinate the daily activities of sous chefs, line cooks, food prep workers, and line production staff.
Time Management: Create actionable prep lists, manages ingredient batches and schedule tasks.
Quality Control: Inspect all raw ingredients for freshness, taste test for consistency, examine finished plates for proper temperature, execution, and presentation.
Inventory & Ordering: Track food supply levels, predict demand, and place regular orders with vendors while minimizing waste, and track waste.
Financial Management: Manage the back-of-house budget by tracking food and labor costs to meet profit margins.
Safety & Compliance: Enforce strict adherence to local health codes, food safety laws, and proper sanitation practices.
Staffing & Scheduling: Hire, train, and onboard kitchen personnel, and create weekly shift schedules.
Cross-Team Collaboration: Work alongside front-of-house staff to educate cashiers on menu details, daily specials, and allergen accommodations. Demonstrates a “We” not “me” mentality.

Key Skills and Qualifications

Culinary Expertise: Advanced knowledge of flavor profiles especially with Native American dishes, cooking techniques, knife skills, and plating design. Experience with Indigenous recipe development and innovation.
Leadership: Proven ability to manage a diverse, fast-paced team, delegate tasks effectively, prioritize, and resolve conflicts under pressure. Demonstrates confident leadership with positive teaching and coaching mentality.
Commercial Equipment Mastery: Proficient in safely operating commercial kitchen tools, including industrial ovens, grills, fryers, slicers, comals, roasters, and walk-in coolers.
Optimize Operations: Assess and build processes that maximize efficiency.
Business Acumen: Basic math and computer literacy for inventory management, menu costing, and scheduling software.
Physical Stamina: Ability to stand, walk, and lift heavy objects for long hours in a hot, fast-paced kitchen environment.
Communication: Clear positive communication that drives results. Transparent and respectful communicator that builds trust across all teams.

Education and Experience Requirements

Experience: Typically requires 3 to 5+ years of commercial kitchen experience, with progressive leadership roles (such as Line Cook to Sous Chef).
Education: High school diploma or equivalent is standard; a degree or certificate in Culinary Arts from an accredited technical school or college is highly preferred.
Certifications: Food safety manager certification (e.g., ServSafe) is mandatory.

Work Environment & Schedule

Chefs operate in highly hectic, fast-paced environments. This role requires a flexible schedule, routinely including early mornings, late evenings, weekends, and major holidays.

Work is performed in a busy, high pressure kitchen environment. May be exposed to extreme heat from ovens, grills, fryers, stoves, as well as extreme cold in walk-in freezers.

Must be able to stand and walk for up to 10 hours continuously. Must be able to lift and carry up to 50lbs of inventory from stockroom to workstation throughout shift. Requires full range of motion including standing, bending, reaching, and repetitive use of hands and arms to operate cooking equipment and utensils. Must be able to distinguish tastes, odors, and colors to ensure food quality and safe food.

Must have legal authorization to work in the United States. This is an exempt role.

Pay: $55,000.00 - $58,000.00 per year
