Sushi Cook – Osaka Miami

Osaka Miami is a high-end culinary destination where Japanese techniques meet Peruvian flavors in the renowned Nikkei style. As part of the MCK family, we pride ourselves on precision, artistry, and an exceptional guest experience. We are looking for a dedicated Sushi Cook to join our "Barra Sushi" team and grow within our global culinary structure.

Job Summary

As a Sushi Cook, you will be the backbone of our sushi bar’s operational excellence. You will perform essential support tasks, prepare high-quality ingredients, and maintain station order under the guidance of our Itamae Chefs. This role is designed for someone with a passion for seafood who is eager to refine their cutting skills and master the art of Nikkei cuisine.

Essential Duties & Responsibilities

Execute deep cleaning of the workspace and equipment, according to hygiene protocols, to ensure food safety and prevent contamination.
Prepare basic supplies (vegetables, simple sauces), according to portioning standards, to support the production flow of the Itamaes.
Handle kitchen utensils properly, according to safety regulations, to guarantee efficiency in the preparation of support dishes.
Learn basic cutting and plating techniques, according to the guidance of the Itamae, to progressively develop technical skills within the Nikkei style.
Support the operational closing of the bar, according to storage protocols, to ensure the correct preservation of perishable products and minimize waste due to improper handling.
Assist in the verification of mise en place quality for secondary ingredients, according to brand flavor standards, to maintain consistency.

Qualifications & Requirements

Experience: Minimum of 6 months to 1 year of experience in professional cooking, preferably focused on sushi or fish preparation.
Education: Technical studies in Gastronomy.

Skills

Strong knife skills and attention to detail.
Basic knowledge of Japanese cuisine and Good Food Handling Practices (GMP).
Learning Agility: Ability to quickly master new cutting and plating techniques.
Languages: Basic English proficiency.
Mindset: A proactive, action-oriented team player with a focus on customer satisfaction.
