About The Empanada Lady

The Empanada Lady is a growing Afro-Latina, Puerto Rican restaurant, bar, catering, and events brand located in downtown Baltimore. What started as a home-based hustle has grown into a full-service restaurant known for handcrafted empanadas, bold Boricua flavors, cultural storytelling, and high-volume catering.

We are more than a restaurant. We are building a brand rooted in culture, consistency, hospitality, and community impact. Our operations include daily service, brunch, catering, private events, offsite activations, and future expansion.

As we grow, we are seeking an Executive Chef to take full ownership of the back of house and help elevate both our food and our systems.

Overview

We are seeking a dynamic, hands-on, and passionate Executive Chef to lead our culinary team and elevate our kitchen operations to the next level.

This role requires both culinary leadership and operational discipline. You will be responsible not only for food quality and kitchen performance, but also for communication, organization, and administrative follow-through that keeps the business running efficiently.

This is not just a cooking role. This is a leadership role inside a growing business.

Position Summary

The Executive Chef will oversee all back-of-house operations, including kitchen leadership, food quality, ordering, inventory, cost control, training, menu development, catering, offsite execution, and administrative coordination.

You will be expected to operate with structure, communicate clearly, and ensure that both the kitchen and its systems run without constant oversight.

Key Responsibilities Kitchen Leadership & Culture

Lead, manage, and hold accountable all BOH staff
Create a structured, professional, and efficient kitchen environment
Train, mentor, and develop team members
Foster a culture of accountability, urgency, and consistency
Collaborate with ownership and FOH leadership

Menu Development & Culinary Innovation

Lead development of menu items, specials, and catering offerings
Maintain cultural integrity and flavor standards
Document recipes with clear execution standards
Balance creativity with cost, labor, and efficiency

Food Quality & Execution

Ensure consistency in taste, presentation, portioning, and timing
Conduct quality checks across all kitchen operations
Build systems to eliminate inconsistency and waste

Ordering, Inventory & Cost Control

Manage ordering, vendor communication, and inventory levels
Review invoices and resolve discrepancies
Monitor food cost and reduce waste
Support pricing decisions for menu and catering

Training & Team Development

Train staff on recipes, prep systems, and standards
Create prep lists, training guides, and checklists
Develop team members into independent, reliable staff

Catering, Events & Offsite Execution

Oversee catering prep, packaging, and execution
Ensure all offsite events meet brand standards
Build systems for scaling catering and expansion

Administrative & Operational Responsibilities

Monitor and respond to kitchen-related emails in a timely and professional manner
Use Google Drive to review, update, and maintain prep plans, recipes, inventory sheets, and operational documents
Utilize Google Calendar and internal systems to stay aligned on catering orders, events, prep schedules, and deadlines
Communicate updates, issues, and needs clearly with ownership and management
Maintain organized digital records for recipes, inventory, catering prep, and kitchen systems
Follow up on tasks, vendor communication, and operational priorities without being prompted

Safety, Sanitation & Compliance

Maintain a clean, organized, and inspection-ready kitchen
Ensure compliance with food safety and health regulations
Enforce proper labeling, storage, and sanitation standards

Requirements

Proven experience as an Executive Chef, Head Chef, Sous Chef, or Kitchen Manager in a high-volume environment
Strong background in food production, restaurant management, and catering operations
Experience leading teams in fast-paced kitchens
Strong understanding of food cost, inventory, labor, and kitchen systems
Experience with catering, banquets, and large-scale food execution
Proficiency in basic administrative tools including email, Google Drive, and Google Calendar
Ability to manage both kitchen operations and administrative responsibilities effectively
Strong communication, organization, and follow-through
ServSafe certification preferred or willingness to obtain
