About Haymaker Bun Company

Haymaker Bun Company is an award-winning bakery and café with locations in Middlebury and Burlington, Vermont. Since opening in 2017, our mission has been to celebrate and elevate our collective sense of community through the foodways we sustain, the stories we tell, and the warmth of our gatherings.

From our signature brioche cinnamon buns and seasonal pastries to thoughtfully prepared breakfast, lunch, catering, and our growing wholesale frozen product line, everything we create is rooted in craftsmanship, hospitality, and genuine care for the people we serve.

We're looking for an experienced, passionate baker and leader to help shape the next chapter of Haymaker.

About the Role

The Lead Pastry Chef is responsible for leading all aspects of pastry and bakery production while developing and managing a talented team. This role combines hands-on production with leadership, organization, quality control, and menu development.

The ideal candidate is someone who loves baking as much as they love mentoring others, thrives in a fast-paced environment, and takes pride in creating beautiful, consistent products every single day.

Responsibilities

Lead daily pastry and bakery production
Produce brioche buns, pastries, cakes, cookies, and seasonal menu items
Ensure consistent quality and presentation across all products
Train, mentor, and support bakery team members
Create production schedules and manage daily workflow
Oversee inventory, ordering, and ingredient management
Maintain food safety and sanitation standards
Contribute new recipes, seasonal offerings, and process improvements
Conduct quality control throughout production
Participate in weekly leadership meetings
Assist with hiring, onboarding, scheduling, and performance reviews
Collaborate with café leadership on special events, catering, and wholesale production

Qualifications

We're looking for someone who has:

1+ years of professional pastry or bakery experience
Previous leadership or management experience preferred
Experience with enriched doughs, brioche, laminated pastries, and scratch baking
Strong organizational and time-management skills
A positive, collaborative leadership style
Passion for teaching and developing others
Ability to multitask while maintaining exceptional attention to detail
Commitment to cleanliness, food safety, and consistency
Flexibility to work early mornings, weekends, and holidays as needed
