The Executive Chef will play a vital role in the ongoing success of our service team at Okaloosa. Okaloosa is one of the most unique restaurant/community gathering destinations for families, adults, and teens in and around the Monroe area. Our property is one of a kind. Quite frankly, Okaloosa is a vibe and one that the community is buzzing about. Honestly, though, it must be experienced to fully appreciate. Our brand and design inspiration is from the late 1970s and early 1980s Florida, and our food is inspired by the Gulf coast with hints of the classic at home American dinner tables. Every area of the property offers a unique experience for our guests. The main dining area is a bungalow-style building with roll-up glass doors/windows on three sides that allow the guests to feel the energy of the entire property. The design inside is fun and retro, and immediately upon entering sends you back to a simpler time. Vintage shag carpet on the walls, retro wallpaper, and vintage tableware makes enjoying some of our dinner dishes like pan-seared red snapper with grits or our Mexican lasagna truly something unique. Our fully utilizable front lawn with brand new artificial grass is the perfect picnic-style setting to bring your favorite canine and favorite friend for a game of corn hole on our custom-made boards or chill out and enjoy a Bushwhacker and Grouper sandwich. Not to be overshadowed by the rest of the property, our oasis-like courtyard with hand-painted murals, tropical plants, tiki-style bar, etc., will transport you to a different place. At the same time, you enjoy one of our herb-roasted turkey clubs or a cool piece of key lime pie while watching a game on our 70-inch flat-screen. And last but certainly not least, our side lawn is kid and teen focused. In a secure area, the kids can enjoy lots of fun for any age. The highlight is our mid-1970s boles aero vintage aluminum 30 ft. long trailer where we have created a vintage arcade. Our modernized arcade games have 412 of the most popular video games from the past 40 years. We also have a playground area for kids to enjoy being kids with many entertaining features.
The Executive Chef reports to the Director of Operations and Culinary Director and provides restaurant guests excellent food quality, consistency, reasonable prices, in an attractive environment, and with professional service. Responsibilities include managing the culinary functions to meet the food quality goals, meeting the company's financial goals, facilities maintenance, and personnel development objectives direction at Okaloosa Okaloosa is one of the most unique restaurant/community gathering destinations for families, adults, and teens in and around the Monroe area. Experience:
- Executive Chef, Kitchen Manager, Sous Chef: 1-2 years (Preferred)
You will be responsible for all food service-related activities, which include:
- Manage the daily operations of the kitchen area.
- Implementing the production process.
- You will also be responsible for developing, mentoring, and coaching internal associates.
- Implementation of systematic production methods.
- Standardized recipes.
- Portion control.
- Menu development and purchasing requirements.
- In carrying out assigned responsibilities, the Executive Chef must comply with all client policies and regulatory agencies.
- Successful candidates will have previous leadership and food service management experience. College degree preferred.
- Working directly with the Owner, General Culinary Director and Director of Operations to carry out brand initiatives.
- Monitor, analyze, and control all labor and food costs; prepare the appropriate reports, charts, and schedules to ensure budgets are met.
- Manages kitchen staff, including training, counseling, disciplining, terminating, and complete performance evaluations.
- Ensure attractive presentation and quality of all food and dishes for very high-end clientele.
- Meet guest needs by developing and maintaining effective relationships with internal and external customers and promoting a customer service orientation.
- Perform other reasonable job duties as requested by supervisor.
Qualifications:
- B.S. Degree in Culinary Arts, Food Services Technology/Management or related field; or A.O.S. Degree in Culinary Arts or culinary certificate and required experience.
- Minimum of 1-2 years of progressive culinary/kitchen management experience, depending upon formal degree or training.
- Extensive catering experience a plus.
- High volume, complex foodservice operations experience - highly desirable.
- Institutional and batch cooking experiences.
- Hands-on chef experience a must.
- Comprehensive knowledge of food and catering trends focused on quality, production, sanitation, food cost controls, and presentation.
- Must be willing to participate in customer satisfaction programs/activities.
- Must be able to complete criminal background checks (State and Federal) and drug screenings.
- Willingness to set a high standard in the kitchen through leading by example.
- Consistently remain self-driven, innovative, and possess the commitment to become an industry leader.
- Knowledge of local health rules, regulations, and food handling.
- Knowledge of P&L, food and labor costs, and menu costing.
- Proven ability to effectively lead and train a diverse workforce.
- Operate with passion, respect, integrity, dedication, and empowerment to all internal and external guests.
