GENERAL MANAGER

About Us

Monarch Market, in the heart of downtown Charlotte is looking for a General Manager! Monarch Market is an elevated food hall concept that serves as a culinary incubator. In 12 independent food concept, Monarch Market deploys three distinct bar concepts.

The Role

The General Manager (GM), in collaboration with the leadership teams, sets and communicates standards and practices to ensure a high-performing team and an exceptional guest experience. You’ll have the autonomy to run day-to-day operations while partnering with a corporate support team to shape service standards, build strong teams, and drive financial performance. The right candidate thrives in a fast-paced environment, is confident in food & beverage operations, and is excited to grow as the business expands.

The mission

Own the guest experience, the P&L, and the day-to-day rhythm of a busy, modern food & beverage operation. You’ll lead a team that cooks delicious food, serves with warmth, and runs a tight, compliant, profitable house.

Leadership, People & Culture

● Build and grow teams that represent our culture and values.

● Hire, train, schedule, coach, and develop front Of House & Bar teams.

● Set clear performance, cultural, guest, and financial objectives; hold leaders accountable

to KPIs.

● Mentor teammates throughout the business and lead with calm, steady presence under

pressure.

● Hold staff accountable to standards and execute progressive discipline fairly and

consistently.

Guest Experience

● Own service standards and daily execution, from first impression to last touch.

● Coach leads and teams to convert first-time guests into regulars.

● Lead active floor presence and table touches; resolve issues quickly and professionally.

● Support staff and jump into the flow of service as needed.

Daily Operations & Quality

● Ensure the operation opens/closes smoothly every day: stations set, prep lists cleared,

service flows, closeouts clean.

● Maintain food & beverage quality: consistent recipes, accurate expo, attractive

presentation, proper pour sizes.

● Ensure FOH and Bar are fully stocked and service-ready at all times.

● Maintain excellent cleanliness, organization, and facility upkeep across the entire

operation.

● Cultivate regulars and continuously strengthen the food hall experience.

Financial Performance

● Monitor payroll weekly; proactively adjust schedules based on business levels.

● Forecast and schedule to demand; manage labor and purchasing to meet budget goals.

● Control COGS through effective purchasing, receiving, storage, and product

maintenance.

● Ensure inventory levels are accurate and appropriate for staff and guests.

Events & Private Dining

● Support planning and execution of private dining/events, including payments, menus,

coordination, and logistics.

● Scope, price, staff, and execute events (on-site/off-site) end-to-end, as applicable.

Systems, Admin & Tech

● Maintain strong communication across the teams

● Oversee administrative processes and reporting (examples include daily reports, weekly

meetings, check-ins, cash-outs, bank close-outs, payroll edits).

● Manage POS and operational systems; act as first responder for tech issues (GoTab

experience preferred).

● Manage comps/voids, cash handling, and inventory workflows.

● Complete assigned administrative requirements accurately and on time.

Compliance & Safety

● Ensure Health Department compliance and operational readiness at all times.

● Remain current and compliant with HR policies and best practices.

● Maintain audit-ready standards: cleaning logs, checklists, and safety procedures.

● Ensure responsible alcohol service standards are followed

● Financial performance: Forecast, schedule to demand, control COGS and labor, manage

vendors, and drive topline sales.

You bring

● 3+ years leading a high-volume restaurant, hotel F&B, or catering operation (5+ years

hospitality management experience strongly preferred).

● Strong leadership skills: you coach, develop, and hold teams accountable.

● Solid financial acumen (labor, COGS, forecasting, and P&L awareness).

● Deep operational knowledge across kitchen, floor, and bar service.

● Confident conflict resolution and guest recovery skills.

● POS fluency (Toast ideal) and comfort with reports/spreadsheets.

● Payroll entry and revisions experience.

● Strong organizational skills: prioritize, delegate, follow through.

Nice to have

● Event/catering pricing and logistics experience.

● Food safety certification; alcohol service certification.

● Experience rolling out training programs or opening new venues.

● Bachelor’s degree (preferred).

Schedule & compensation

● Full-time, on-site; evenings/weekends/holidays as business demands.
