Chef de Cuisine

About Us

Join our team at a premier, high-volume restaurant located in the heart of downtown Nantucket. We specialize in innovative Japanese cuisine, featuring an upscale selection of sushi, noodles, dumplings, and an extensive raw bar, alongside creative poke, ceviche, and signature large plates. We take pride in a fast-paced, high-energy environment that delivers exceptional culinary experiences.

Position Overview

We are seeking a talented, organized, and passionate Chef de Cuisine to oversee and elevate all in-house culinary operations. Working closely with the Chef/Owner, you will lead our kitchen team, maintain uncompromising standards, and drive culinary excellence.

Key Responsibilities

Kitchen Leadership: Supervise and maintain daily kitchen operations, ensuring smooth services in a high-volume environment.
Menu Development: Collaborate directly with the Chef/Owner on menu innovation, creation, and seasonal adjustments.
Financial Management: Actively manage kitchen budgets, with a strong focus on optimizing labor and food costs.
Inventory & Logistics: Oversee daily inventory, ordering, and receiving to ensure product freshness and minimize waste.
Culinary Creativity: Conceptualize and execute daily specials that complement the menu, highlight seasonal ingredients, and drive revenue.
Team Development: Train, mentor, and motivate the back-of-house team by leading by example and fostering a positive workspace.
Sanitation & Maintenance: Enforce strict sanitation standards, proper storage protocols, and ensure the overall cleanliness and maintenance of the kitchen and equipment.

Qualifications

Minimum of 2 years of experience as a Chef de Cuisine (preferred) or high-level Sous Chef in a high-volume restaurant.
Strong background or deep interest in Japanese cuisine and raw bar execution is highly preferred.
Proven tracking record of managing food and labor costs.
Excellent leadership, communication, and team-building skills.
