Full Job Description

JOB TITLE: Dietary / Technician

LOCATION: Nashville TN Detox Facility

SCHEDULE: FT, PT- 2nd Shift- may include weekends / holidays

SALARY: D.O.E.

ESSENTIAL DUTIES AND RESPONSIBILITIES

The following duties and responsibilities are representative of this position. Additional duties may be assigned as needed.

Must possess strong commercial kitchen experience, exceptional organizational skills, and the ability to effectively manage food inventory obtained through donations and food truck partnerships.
Oversee all aspects of kitchen operations, including menu planning, meal preparation, food safety, sanitation, and maintaining an organized environment that supports recovery-focused programming.
Prepare, cook, and serve hot, nutritious, and balanced meals for clients and staff using commercial-grade kitchen equipment.
Demonstrate creativity and resourcefulness in preparing nutritious, satisfying meals with limited or varying ingredients.
Plan, coordinate, and maintain standards and procedures related to food storage, preparation, service, equipment sanitation, departmental cleanliness, and employee/client safety.
Supervise inventory storage procedures, ensuring items are properly organized, labeled, dated when necessary, and stored according to established guidelines.
Oversee cleaning and sanitation activities, including disinfecting work surfaces, mopping floors, removing trash, and completing assigned housekeeping tasks.
Collaborate with the Dietary Supervisor to ensure menus and departmental policies comply with nutritional standards, government regulations, and organizational procedures.
Review client dietary needs and special diet requirements with Primary Counselors and provide meals that meet documented medical and physical needs, excluding personal food preferences.
Inspect food products, preparation areas, and storage locations to ensure compliance with health and safety standards. Verify that food handlers wear required hairnets and gloves during food preparation and service.
Follow established diet manuals and demonstrate accuracy in weighing, measuring, and portioning food.
Conduct weekly departmental inspections to ensure facility cleanliness and identify repair or replacement needs.
Maintain knowledge of and comply with company policies and procedures, including safety protocols and fire/disaster preparedness plans.
Demonstrate the ability to lift up to 50 pounds, assess lifting requirements to request assistance when necessary, and remain standing for extended periods.
Prepare and provide high-quality meals according to standardized recipes while maintaining cost-effective food service practices.
Plan and coordinate cooking schedules to ensure meals are prepared and served on time and at appropriate temperatures.
Monitor food temperatures prior to service to ensure compliance with food safety standards.
Demonstrate a working knowledge of proper food preparation techniques, including the preparation of modified and therapeutic diets.
Implement approved diet changes and accommodate late-arriving clients when necessary.

QUALIFICATIONS

Experience working with and operating commercial kitchen equipment.
Ability to satisfactorily perform all essential job duties and responsibilities.
Basic computer proficiency, including the ability to type at least 20 words per minute.
Strong verbal and written communication skills.
Current CPR and First Aid certifications are required.
Must successfully pass a background check and drug screening.
Valid Tennessee Driver's License with an "F" endorsement required. Candidates may obtain the "F" endorsement after hire if not currently held.

PHYSICAL REQUIREMENTS

Ability to lift up to 50 pounds.
Ability to stand for extended periods of time.
Ability to safely perform duties in a commercial kitchen environment.

EDUCATION and/or EXPERIENCE

Minimum 2 years' experience, required, in a commercial or institutional kitchen (detox, hospital, or cafeteria preferred).
Valid Food Handler's or ServSafe Certification, required
Familiarity with modified diets and nutritional standards
High School Diploma or GED
