Momotaro Nashville (opening soon), from Jean Banchet Award of Culinary Excellence winner Chef Gene Kato & Boka Restaurant Group, brings an authentic and refined Japanese dining experience to Nashville. Rooted in tradition yet shaped by modern culinary culture, Momotaro is known for pristine sushi, robata-grilled specialties, and a thoughtfully curated beverage program — all delivered within a striking, high-energy space.

The Role

Working closely with the General Manager, Assistant General Manager, and culinary leadership team, the Line Cook plays a hands-on role in daily kitchen operations, food execution, and station support. This position helps maintain culinary standards, supports team efficiency, and ensures a smooth and consistent service.

What You’ll Do

Prepare and execute food items while maintaining all safety and sanitation standards
Properly prep, stock, and maintain assigned stations throughout service
Ensure quality control and consistency by following standardized recipes
Store, label, and date all food products according to policy
Maintain consistency in portioning, cooking, and presentation
Demonstrate basic knowledge of cooking techniques and knife skills
Safely operate and maintain all kitchen equipment
Communicate equipment needs and maintenance requests to management
Properly store ingredients and deliveries according to sanitation guidelines
Maintain a clean and organized workstation, adhere to FIFO procedures, and uphold strong personal hygiene standards
Complete all opening, mid-shift, and closing duties in a timely manner

What We’re Looking For

Minimum 1 year of experience in a similar role
Basic understanding of cooking techniques, station maintenance, and food safety standards
Commitment to quality, consistency, and sanitation
Food handler’s certification (or ability to obtain)
A collaborative mindset and pride in representing the restaurant

Physical Requirements:

Stand and walk for an entire shift, including moving safely through all areas of the restaurant which may include stairs, uneven, and/or slick surfaces
Ability to bear exposure to hot and cold environments
