Job Requirements

Execute all sushi menu items according to recipe standards, plating specifications, and quality expectations.
Prepare sushi rice, sauces, garnishes, fillings, and specialty components with consistency.
Produce nigiri, sashimi, maki rolls, hand rolls, specialty rolls, and chef selections.
Maintain proper knife skills and cutting techniques for fish fabrication and portioning.
Ensure proper temperature control, storage, and handling of raw seafood.
Maintain an organized, clean, and efficient sushi station throughout service.
Communicate effectively with kitchen leadership and service teams.
Work efficiently during high-volume service periods while maintaining quality.
Assist with menu development, sushi specials, and seasonal features.
Train and mentor sushi cooks and culinary team members as needed.
Support overall kitchen cleanliness, organization, and operational standards.

Food Safety & Sanitation

Maintain strict adherence to HACCP guidelines and food safety standards.
Properly label, date, rotate, and store all products.
Maintain proper cold holding temperatures for seafood and prepared ingredients.
Follow all health department regulations regarding raw fish handling.
Maintain a clean and sanitary work environment.

Pay: $23.00 - $30.00 per hour
