Executive Chef

Wednesday through Sunday | 25–30 hours/week | $18–$40/hour + gratuities, tips & experience

THE OPPORTUNITY

Casa Rondeña Winery is seeking an experienced and passionate Executive Chef to lead our culinary program and bring creativity, consistency, and thoughtful execution to the food experience across our property.

Located in Los Ranchos de Albuquerque, Casa Rondeña is an estate winery rooted in New Mexico's wine, culinary, and cultural traditions. Guests enjoy estate-grown wines, beautiful Moorish-inspired architecture, wood-fired cuisine, seasonal menus, private events, and memorable experiences that celebrate the connection between food and wine.

We are looking for a chef who takes personal ownership of every plate and every aspect of the culinary operation. Someone who values scratch cooking, clean technique, seasonal ingredients, and consistency. Someone who is equally comfortable developing menus, leading a kitchen team, managing day-to-day operations, and stepping onto the line when needed.

This is an opportunity to have a meaningful influence on the continued development of Casa Rondeña's culinary program. The right candidate will bring strong leadership, creativity, organization, and a genuine passion for hospitality.

WHAT YOU'LL DO

Lead and oversee all culinary operations at Casa Rondeña, ensuring exceptional quality, consistency, and presentation
Develop and execute seasonal menus, wine-paired dinners, tasting experiences, and special events
Oversee all food preparation from daily prep through service, including appetizers, entrées, desserts, and wood-fired dishes
Create dishes that complement and elevate Casa Rondeña's estate wines while reflecting Spanish and New Mexican culinary influences
Manage daily kitchen operations, ensuring smooth, efficient, and professional service
Establish and maintain high standards for food quality, presentation, sanitation, and kitchen organization
Oversee inventory, ordering, food costs, proper product rotation, and storage
Maintain compliance with all health department and food safety standards
Lead, train, and mentor kitchen staff while fostering a positive, respectful, and professional work environment
Develop prep systems, recipes, and kitchen procedures that promote consistency and efficiency
Collaborate with management and front-of-house teams to create a seamless guest experience
Work closely with the events team to execute private events, corporate gatherings, wine dinners, and members' club programming
Monitor food costs and minimize waste while maintaining quality and creativity
Stay current with culinary trends, seasonal ingredients, and evolving guest expectations
Lead by example and be willing to work hands-on in the kitchen during service when needed

WHO YOU ARE

Proven experience as an Executive Chef, Chef de Cuisine, Sous Chef, or in a comparable culinary leadership role. Culinary schooling or formal training is a plus, but not required.
Professional culinary experience in fine dining, upscale hospitality, catering, or high-volume event environments.
Strong culinary fundamentals, including knife skills, sauces, proteins, timing, plating, and scratch cooking.
A creative and thoughtful approach to menu development and seasonal cuisine.
Strong understanding of food costs, inventory management, ordering, and kitchen operations.
A natural leader who can train, motivate, and hold a kitchen team accountable to high standards.
Calm, organized, and solution-oriented under pressure.
Strong communication skills with the ability to collaborate effectively with management and front-of-house teams.
Passionate about hospitality and creating memorable guest experiences.
Physically able to stand for full shifts, lift up to 50 pounds, and work in a hot kitchen environment.
Available Wednesday through Sunday, including evenings, weekends, and holidays.
Dependable, professional, punctual, and committed to building trust within a team.

Casa Rondeña is an estate winery in Los Ranchos de Albuquerque, founded in 1995 by John Calvin. The property encompasses five distinct areas, including the Tasting Room, Winery and Bell Tower, Barrel Room, and our private members' club and event spaces.

We produce under 10,000 cases annually and take pride in doing things the right way: small-production wines, on-site winemaking, thoughtful hospitality, and authentic experiences that celebrate New Mexico's unique character and connection to the traditions of Spain.
