Full Job Description

ABOUT MANGIA & THE ROLE

Mangia NYC, a pioneering farm-to-table gourmet eatery and catering provider since 1981, operates four bustling Manhattan locations and a 24/7 bakery, delivering fresh, artisanal Italian fare-sandwiches, salad bar, juice bar, gelato, sourdough pizza, boxed catering, and mobile gelato carts.

We are seeking a Director of Operations to serve as the operational backbone of the company. Reporting directly to the CEO, this is a high-impact leadership role for an experienced operator who thrives in a fast-paced, hospitality-driven environment. The ideal candidate is equally comfortable in a boardroom and on a production floor, excels at building systems that scale, and brings the emotional intelligence to lead and inspire diverse teams across multiple sites.

KEY RESPONSIBILITIES

Operations & Execution

Oversee the day-to-day operations of all Mangia locations, including catering kitchens, and event services, ensuring consistent delivery of quality, efficiency, and hospitality standards.
Partner with culinary and front-of-house leadership to develop, document, and enforce operational standards, SOPs, and best practices across all sites.
Drive operational planning and readiness for high-volume periods, high-profile client events, and new location openings.
Monitor and continuously improve key operational metrics including food cost, labor cost, waste, speed of service, and client satisfaction scores.

People Leadership

Lead, mentor, and develop a team of site managers and operations supervisors across multiple Manhattan locations.
Build a culture of accountability, hospitality, and continuous improvement through regular coaching, structured performance reviews, and clear goal setting.
Collaborate with HR on recruiting, onboarding, scheduling, and retention strategies to maintain a high-performing, engaged workforce.
Serve as a key escalation point for team and client issues, modeling a calm, solutions-oriented approach under pressure.

Client & Vendor Relations

Maintain strong, proactive relationships with key corporate clients, acting as a senior operational contact and ensuring that service delivery consistently exceeds expectations.
Negotiate and manage vendor and supplier relationships, overseeing procurement, contract compliance, and cost management in partnership with the finance team.
Identify opportunities to improve client experience and translate client feedback into operational enhancements.

Strategy & Growth

Work closely with the CEO and leadership team on strategic planning, including expansion initiatives, new service offerings, and operational infrastructure investments.
Lead cross-functional projects such as technology implementation, kitchen equipment upgrades, sustainability initiatives, and health & safety compliance programs.
Develop and manage the operations budget, providing accurate forecasting and variance analysis to senior leadership.

QUALIFICATIONS

Required

5 years of progressive operations leadership experience, with at least 3 years in a multi-site or multi-unit food service, hospitality, or catering environment.
Demonstrated success managing teams of 50 or more employees across multiple locations.
Strong financial acumen, with hands-on experience managing P&L, labor models, and food cost in a high-volume operation.
Exceptional organizational and project management skills; able to manage competing priorities with composure and precision.
Outstanding interpersonal and communication skills, with the ability to build trust and credibility at all levels - from kitchen staff to C-suite.
NYC Food Handler's Certificate or ServSafe Manager Certification (or willingness to obtain).

Preferred

Experience in a New York City food service or contract catering context, with familiarity with the city's regulatory environment.
Track record of leading technology or systems implementation projects (e.g., POS, scheduling, inventory management).
Bachelor's degree in Hospitality Management, Business Administration, Operations, or a related field.
Bilingual (English/Spanish) is a plus given the composition of our teams.
