Green River Preserve Kitchen Staff

Position: Kitchen Adventure Assistant/Prep Cook/Cook

Responsible to: Kitchen Manager, Executive Director

Come work at our NC summer camp/ envrionmental education program and have access to over 15,000+ acres of trails right outside your door! That's right! Spend a shift in the kitchen and then play outside with full access to some of the best trails in Western NC. Live in a community of 30 other staff and approximately 120 campers. This job includes room, board, and laundry. Monthly salary starting at $2000 based on experience.

Job Description: The prep cooks will work under the supervision of the Kitchen Manager to implement menus that aim for fresh, healthy meals that keep campers and staff enjoying themselves through very active days. Cooking is often from scratch, both main dishes and desserts. In the GRP kitchen, we like to play to your strengths as a chef. If you have a knack for baking, a love of grilling, or would enjoy the opportunity to create a dish to be featured on our weekly menu, there are many ways that we foster your ability to create as a chef and add your personal touch to the camp kitchen environment. Experience with food allergies and dietary restrictions is required. Green River Preserve also has a farm on-site which produces a variety of fresh ingredients that will be incorporated into meals and snacks. Prep cooks help provide 3 meals and 3 snacks every day to 175-200 people during the camp sessions.

Dates: This is a seasonal position for our fall school programming. Dates are September 1st - October 11th.

Desired Qualifications:

Servsafe certification
Servsafe allergen certification or willingness to obtain
Understanding of health department food preparation and food storage guidelines
Specific interest in working in food service in a camp setting
Experience preparing food within a specific time frame
Ability to work well with others not only in the kitchen but also with program participants
Ability to understand and adhere to restrictions surrounding special diets and allergies
Ability to read menus as well as take verbal direction from supervisors
Ability to undertake heavy cleaning throughout kitchen area
Background check and health screening required
Must be willing to accept shared housing on location

Daily Responsibilities:

Handle, prepare, serve, and dispose of food safely and properly under the direction of the Kitchen Manager and Executive Director.
Use, operate, and clean all electrical and mechanical kitchen equipment safely and properly, including but not limited to ovens, steamer, tilt skillet, flat-top grill, charcoal and propane grills, Hobart dishwasher, stand mixer, etc.
Assist in unloading, unpacking, and storing supplies
Maintain the following areas in the lodge: beverage counter, yogurt/cereal station, vegetarian table, salad bar, rice and bean bar, soup station
Regularly wash, dry, and put away dishes in accordance with health codes as well as GRP standards
Help maintain GRP recycling and composting programs by properly sorting waste
Sweep, mop, and generally scrub kitchen on a regular basis
Comply with all current NC health and sanitation codes as well as all American Camp Association requirements for safe and proper food handling, preparation, serving, and disposal
Ensure a safe, clean, and efficient food service operation
Perform other tasks and duties as assigned

Essential Functions:

Must be able to lift and carry up to 50 lbs
Function effectively in a wide range of temperatures, from 32 degrees to 95 degrees, within the kitchen, refrigerator, and dining areas
Stand and walk on concrete floors for up to 6 hours at a time
Assess the edibility of food
Ability to work and live in a remote setting within a small community
Read written documentation both on paper and on screen
Listen to and comprehend oral communication
Communicate effectively in both verbal and written communications
Work several days in a row, sometimes with little rest
Work with and have patience for children for up to 6 hours per day
Respect and obey supervisors
Live and work with other people up to 24 hours a day
Work in a team and perform interactive behaviors
Maintain personal hygiene and health (bathe, eat, use the restroom) without the assistance of others
18 years or older
