Swamp Dawg Restaurant Management Group is a growing hospitality company based in Central Florida, operating a variety of restaurant concepts ranging from fast-casual to full-service dining, entertainment, and community-driven experiences.
We are looking for a highly organized, dependable, and proactive Administrative Project Coordinator to join our team and help support the day-to-day coordination, communication, and organization behind our growing companies and development projects. Our office is based in Weirsdale, Florida. We currently operate businesses throughout Marion, Pasco, and Hernando Counties and are continuing to grow into additional markets throughout Central Florida.

This position works closely with ownership and leadership on a wide range of administrative, operational, and development-related projects. One day may involve organizing office projects and vendor communication, while another could involve helping coordinate permits, preparing project documents, visiting future restaurant sites, or assisting with company initiatives and growth opportunities.
We are looking for someone who is adaptable, solution-oriented, detail-focused, and willing to step in wherever needed to help support a growing hospitality company behind the scenes.
This is not a restaurant management position and is not focused on daily restaurant floor operations. Instead, this role serves as a key organizational and administrative support position helping ownership, leadership, and projects stay aligned and moving forward.

Help manage and organize daily office operations Monday–Friday
Assist ownership with administrative support, organization, and company initiatives
Coordinate follow-up on permits, licensing, inspections, utilities, and development-related projects
Assist with new restaurant development and construction coordination
Visit potential project or restaurant sites as needed to gather photos, updates, and project information for ownership
Communicate with vendors, contractors, franchise partners, municipalities, utility companies, and other external partners
Help organize and maintain company files, operational documents, reports, invoices, and records
Prepare, print, organize, and maintain materials for meetings, projects, and company initiatives
Assist with payroll support, workers compensation documentation, benefits coordination, onboarding paperwork, and general administrative follow-up
Working knowledge of Quick Books in order to assist with bank-related documents, financing paperwork, and business filing organization
Help track project timelines, approvals, and deadlines to ensure projects continue moving forward
Support ownership with follow-up communication and accountability on ongoing projects and initiatives
Assist with marketing coordination and other miscellaneous office support tasks as needed
Review and understand basic business reporting, operational reporting, and P&Ls
Help maintain organization, communication, and follow-through across multiple businesses and departments
