Full Job Description

The Glass Knife is one of Central Florida’s most popular and exciting culinary destinations. We are a high-quality, scratch environment and regularly awarded Orlando’s Reader’s Choice and Critics Choice as “Best Independent Bakery” and “Best Desserts”.

We are hiring a highly skilled, full-time Head Cake Decorator & Team Lead. This leadership role requires extensive experience in the latest cake decorating styles, techniques, and industry trends, along with the ability to oversee daily production and assist the Chefs in mentoring a team of decorators. The ideal candidate will demonstrate exceptional decorating skills, efficiency in a high-volume production environment, strong organizational abilities, and a proven capacity to lead by example while maintaining the highest standards of quality and consistency.

DUTIES & RESPONSIBILITIES:

Oversee daily production of cake team
Write daily task lists for cake team, dividing work up to best fit the production needed as well as the employees’ abilities.
Train employees on new items, offer constructive critiques to ensure the high standard of The Glass Knife is met
Assist baking staff with all levels and stages of cake production, including assembly.
Produce various icings, frostings, and cake fillings according to our recipes and set processes.
Decorate cakes according to established design techniques and production schedule. This includes color blending, molding/shaping and piping.
Buttercream flowers with perfect execution.
Experience with chocolate tempering and wedding cakes (including fondant and gum paste work) is highly preferred.
Inspect all cakes upon completion to ensure accuracy and world-class presentation.
Set up workstations with all needed ingredients and decorating/finishing equipment
Keep a sanitized and orderly environment in the kitchen; Follow sanitation policies at all times
Ensure all cakes and other items are labeled correctly and properly stored in freezers and refrigerators.
Have a positive and teachable attitude, be a great team player. Be reliable.

QUALIFICATIONS & REQUIRED EXPERIENCE:

Minimum 2 year professional cake decorating/finishing experience in a high-volume bakery setting.
Proven experience in baking techniques & tools, scaling and decorating/finishing, plus demonstrated knowledge in measurements, ingredients and equipment used in a high-volume bakery.
Ability to read safety procedures, and operating guidelines & instructions in English.
Ability to walk and stand for long durations.
Ability to safely lift up to 50 pounds, pushing/pulling heavy carts and trams.
Ability to work scheduled hours, including weekdays, weekends, and holidays.
