As we expand to Las Vegas, we are seeking a General Manager to lead day-to-day operations, build a high-performing team, and deliver an exceptional guest experience.
The ideal candidate brings strong restaurant leadership experience, a true hospitality mindset, and the ability to balance respect for tradition with a modern, business-focused approach. You will play a critical role in bringing R&G’s next generation to life in Las Vegas.
Position Overview
Reporting to the Executive Director of Operations, the General Manager will lead the day-to-day operation of the restaurant and serve as the primary on-site leader for the restaurant team.
The GM will play a critical role in building the operation from the ground up, including the team, culture, service standards, training systems, and operating practices. The ideal candidate has demonstrated success leading a new restaurant opening and operating a high-volume, elevated-service environment, with the leadership presence and operational discipline to build a strong team and culture from day one.
The GM should be comfortable working closely with founders, owners, and senior leadership, translating strategic direction into disciplined day-to-day execution while maintaining an exceptional guest experience.
Key ResponsibilitiesPre-Opening & Restaurant Operations
- Partner with the Executive Director of Operations to execute the pre-opening plan and prepare the restaurant for a successful launch.
- Recruit, hire, onboard, and train the restaurant team in partnership with the Executive Director of Operations and HR.
- Establish and maintain service standards, operating procedures, and daily operating routines.
- Lead daily FOH and BOH operations, ensuring consistent execution of service, food quality, cleanliness, and safety standards.
- Manage staffing, scheduling, labor deployment, inventory, cash handling, and other day-to-day operating processes.
- Oversee the effective use of Toast for POS, scheduling, timekeeping, payroll-related processes, reporting, and labor management.
- Ensure employees are properly trained on operating systems and procedures.
- Partner with Culinary, HR, Finance, and Operations leadership to support a consistent and effective operation.
People, Payroll & Compliance
- Build an engaged, accountable, and service-oriented restaurant team.
- Establish clear expectations for performance, attendance, conduct, and service.
- Provide ongoing coaching, feedback, recognition, and development to employees.
- Communicate effectively across all levels of the restaurant, including FOH, BOH, supervisors, culinary staff, and senior leadership.
- Oversee employee timekeeping and payroll hours; review and approve timecards and ensure accurate and timely payroll submissions.
- Monitor overtime, attendance, scheduling, and labor practices.
- Ensure required onboarding, training, certifications, and employee documentation are completed and maintained.
- Ensure compliance with applicable federal, state, and local employment, wage and hour, safety, and workplace requirements.
- Partner with HR and the Executive Director of Operations on employee relations, performance management, investigations, and corrective action.
Restaurant Performance
- Execute the operational and financial goals established by the Executive Director of Operations.
- Monitor restaurant-level performance, including sales, labor, food cost, guest satisfaction, productivity, and profitability.
- Manage labor and operating expenses within established budgets and targets.
- Identify performance gaps and take timely corrective action.
- Communicate restaurant performance, challenges, and opportunities to the Executive Director of Operations.
- Identify opportunities to improve efficiency, service, employee experience, and overall restaurant performance.
Qualifications
- 5+ years of progressive restaurant management experience, including experience as a General Manager, Assistant General Manager, or comparable senior restaurant leadership role.
- Experience managing a high-volume, full-service restaurant.
- Experience with a new restaurant opening or major restaurant launch strongly preferred, including pre-opening planning, recruitment, training, operational setup, and launch execution.
- Experience operating a Chinese, Cantonese, or high-end Asian restaurant, with an understanding and appreciation of the cuisine, culture, service expectations, and guest experience.
- Cantonese-language capability strongly preferred.
- Proven experience hiring, training, developing, and retaining restaurant teams.
- Strong understanding of restaurant labor management, scheduling, timekeeping, payroll processes, and compliance, in a non-union environment.
- Demonstrated financial and business acumen, including labor, food cost, sales, and expense management.
- Strong knowledge of restaurant operations, hospitality standards, and guest experience.
- Excellent communication, organization, and problem-solving skills.
- Ability to work effectively in a fast-paced, high-pressure environment.
- Willingness to work evenings, weekends, holidays, and a flexible hospitality schedule.

Compensation & Benefits
- Base Salary: $90,000 - $105,000 annually (commensurate with experience)
- Performance Bonus: Eligible for a 10% annual performance bonus based on individual performance and achievement of established goals.

Work Environment & Physical Requirements
Must be able to perform the following with or without reasonable accommodation:
- Mobility: Ability to move throughout a large, high-volume restaurant and the Forum Shops premises for extended periods (8–10+ hours per shift).
- Stationary Positions: Ability to remain in a stationary position (sitting or standing) for prolonged periods while performing administrative tasks.
- Lifting: Occasional lifting and moving of restaurant supplies or equipment weighing up to 30 pounds.
- Visual/Auditory: Constant communication with guests and staff in a loud, fast-paced environment; must be able to exchange accurate information in such conditions.
