Full Job Description

The Kitchen Manager is responsible for leading all back-of-house (BOH) operations with excellence, ensuring that every plate leaving the kitchen upholds the Brothers Barbecue standard for quality, consistency, and presentation. This position requires strong leadership, organization, and an unwavering commitment to food safety and cleanliness.

The Kitchen Manager oversees daily production, staff training, ordering, and inventory control, while maintaining a collaborative relationship with front-of-house management. This role plays an integral part in developing future culinary leaders and ensuring the kitchen operates efficiently, safely, and profitably.

Core Responsibilities

Leadership & Staff Development

Lead, train, schedule, and supervise all kitchen staff to ensure consistent execution of recipes and service standards.

Foster a culture of teamwork, accountability, and mutual respect.

Conduct ongoing training on recipes, station setup, sanitation, and safety.

Provide constructive feedback and performance reviews to promote growth and consistency.

Identify and mentor potential leaders to prepare for advancement within the company.

Food Quality & Production

Oversee daily food preparation, ensuring quality, flavor, and consistency in every dish.

Monitor portioning, plating, and presentation to meet Brothers Barbecue standards.

Ensure all recipes are executed accurately and that prep lists are completed efficiently.

Collaborate with ownership, culinary leadership, and management to refine menu offerings and introduce seasonal or special items.

Maintain a high standard of timing, ensuring all dishes are served hot, fresh, and together.

Cleanliness & Food Safety

Maintain a spotless, organized, and safe kitchen environment at all times.

Enforce compliance with local, state, and federal health and safety regulations.

Ensure all staff follow proper food handling, labeling, and storage procedures.

Conduct routine kitchen walkthroughs and corrective action follow-ups.

Promote a “clean as you go” culture that prioritizes safety, organization, and pride in the workspace.

Ordering & Inventory Management

Oversee all ordering and receiving of food, paper goods, and kitchen supplies.

Track inventory and maintain accurate records to minimize waste and control costs.

Manage vendor relationships to ensure quality and reliability of products.

Monitor food and labor costs and work with management to meet budget goals.

Conduct weekly inventory and adjust pars based on sales trends and seasonality.

Facility & Equipment Maintenance

Ensure all equipment and tools are clean, well-maintained, and operational.

Schedule regular preventive maintenance and coordinate necessary repairs.

Maintain proper storage and organization of dry goods, refrigerated items, and smallwares.

Ensure compliance with fire, ventilation, and safety standards at all times.
