Full Job Description

We do LOVE food here at Zeffert and Gold! We thrive on serving every client, couple, and guest creative and delicious food! Becoming Baltimore’s best caterer is no easy feat, but our team strives to surpass that each and every day. We're looking for an Executive Sous Chef to bring energy, creativity, and leadership to our catering team! From elegant weddings to buzzing corporate events, you'll help shape the flavor of every occasion—literally.

Your passion for cooking:

· Every event we put on is “Somebody’s only one”. It is important to let the love you have for food shine throughout each event

· Share your creativity! We pride in our ability to provide customizable menus for guests; and we are always in need of fresh ideas

· Stay curious about food and your environment to teach and grow others in the kitchen

· Partnering with the Executive Chef and Sales team on current food trends

Daily Tasks:

· Assist in monitoring daily production for taste, quality, and presentation

· Coach kitchen team members through their daily prep lists

· Support the Executive Chef in overseeing building cleanliness

· Collaborate with the Executive Chef on daily and weekly tasks of the team

· Prepare customized food items from the weekly prep list

Time management:

· Help develop systems to complete all food prep items efficiently

· The ability to prepare all ingredients and food-set up prior to an event that ensures food safety, and freshness of items

· Executing off premise events with the flexibility to adapt, and control the food temperatures, to the ever-adjusting timing of events

Attention to detail:

· Taste testing. Lots and lots of taste testing.

· Consistency with portion sizes and presentation of food

· Being mindful of food allergens and cross contamination

· All plated meals and food displays to be presented, and garnished, to company standards

· Correcting kitchen staff when items are not being prepared or presented

Organization:

· Focusing on “Mise En Place” while working on daily prep list. Having everything needed to finish a task from start to finish

· Having all tools and kitchen utensils needed for day of event

· Keeping kitchen stations stocked, clean, and orderly

· Set up food for off premise events in order of service and venue specifications

Operations:

· Work in a dynamic, fast-paced environment where no day is ever the same

· Educating kitchen staff to continually meet and exceed company expectations

· Kitchen management at off-premise events

· Collaborating on new menu items, garnishes, or techniques

· Educate front of house staff, when needed, to assure allergens are properly communicated

· Demonstrate food presentation standards at events to staff working stations, or plate up line

· Comfortable with adjusting to new areas; We are 100% off premise for events

· Ability to safely operate portable/stationary ovens, stoves, warming units, etc.

· Able to be on feet 10-12 hours at a time, and able to lift up-to 50lbs

· Prepare sample menus for our client tastings during the week, while documenting presentation with pictures
