About the Property:

Hilton Miami Beach is a highly anticipated new-build hotel set inside a historic Art Deco building steps from Collins Park, the Miami Beach Convention Center, Collins Avenue, Lincoln Road, and South Beach. The property will feature playfully designed guest rooms, three distinct dining concepts, two rooftop pools, an elevated pool deck, a 24/7 fitness center, and flexible meeting and event space, bringing Hilton's legendary service and design-forward hospitality to one of the world's most vibrant destinations.

We are seeking a dynamic, hands-on Executive Chef to lead all culinary operations from pre-opening through launch and into steady-state, shaping a food and beverage program that reflects both local Miami flavor and global sophistication.

The Role

As Executive Chef, you will be the culinary architect of this landmark property, building kitchen teams, systems, and menus from the ground up, and ensuring every outlet meets Hilton's brand standards from day one. This is a rare opportunity to open a flagship Hilton property in one of the most competitive dining markets in the country.

Key Responsibilities

Pre-Opening Leadership

Serve as the property's culinary lead throughout the pre-opening phase, partnering with the Vice President of Operations and F&B Director on the pre-opening report, timeline, and budget
Develop kitchen design input, equipment specifications, and back-of-house workflow in coordination with architects and vendors
Build the culinary organizational chart; recruit, hire, and train sous chefs, line cooks, stewarding, and support staff across all three outlets
Establish standard operating procedures (SOPs), recipe books, plating guides, and training manuals ahead of opening
Coordinate vendor and purveyor relationships, negotiate contracts, and set up supply chains ahead of launch
Lead menu tastings, soft-opening service trials, and readiness reviews prior to grand opening

Menu Development & Culinary Direction

Create and execute innovative, market-relevant menus across all three dining concepts (all-day dining, specialty/signature restaurant, and pool/rooftop bar & lounge), reflecting Miami's local ingredients and global influences
Develop banquet, catering, and in-room dining menus aligned with Hilton event and group business standards
Continuously evolve menus seasonally based on guest feedback, food cost performance, and market trends
Ensure consistency, quality, and presentation across all outlets and dayparts

Cost Controls & Financial Management

Own food cost, labor cost, and overall culinary P&L performance
Implement strong inventory management, portion control, waste tracking, and purchasing controls
Develop and manage the culinary operating budget in partnership with the F&B Director and Finance
Conduct regular menu engineering and costing analysis to protect margins without compromising quality
Partner with procurement on vendor negotiations and contract management to optimize cost without sacrificing standards

Hilton Brand & Compliance Standards

Ensure full compliance with Hilton-approved culinary standards, brand specifications, and Focus/LRA (Lodging Review Audit) requirements
Maintain rigorous food safety, sanitation, and HACCP compliance across all outlets; hold and maintain required food safety certifications
Uphold Hilton's health, safety, and quality assurance protocols, including regular self-audits and third-party inspection readiness
Champion Hilton's culture of hospitality, sustainability initiatives, and Travel with Purpose commitments within the culinary program

Team Leadership

Recruit, train, mentor, and develop a high-performing, diverse culinary brigade
Foster a positive, safety-first, guest-focused kitchen culture from the ground up
Manage scheduling, performance reviews, and career development for culinary staff
Partner cross-functionally with F&B, Banquets, Stewarding, and Purchasing leadership

Qualifications

Minimum 5–7 years as an Executive Chef or senior Executive Sous Chef in a full-service upscale/upper-upscale hotel or resort
Hotel pre-opening experience strongly preferred; candidates who have led a kitchen through construction, staffing build-out, and launch will stand out
Franchise hotel brand experience preferred (Hilton, Marriott, Hyatt, or similar), with working knowledge of brand standards, LRA/QA audit processes, and franchise operating requirements
Proven track record of original menu creation across multiple concepts and dayparts
Demonstrated success with food and labor cost controls, budgeting, and P&L management
Strong knowledge of food safety regulations (ServSafe or equivalent certification required)
Culinary degree or equivalent professional culinary training preferred
Excellent leadership, communication, and vendor negotiation skills
Ability to work flexible hours including evenings, weekends, and holidays as needed for a hospitality operation
Familiarity with South Florida's culinary market and purveyor landscape a plus
