KITCHEN MANAGER — Corner House Hospitality

Department: Kitchen / Culinary Operations Reports To: General Manager / Ownership Employment Type: Full-Time | Salaried (Exempt)

POSITION SUMMARY

The Kitchen Manager is responsible for the daily leadership and operational performance of the back-of-house at their assigned Corner House Hospitality concept. This is a working management role — the Kitchen Manager leads by example on the line while also owning the administrative and culinary functions that keep the kitchen running efficiently, profitably, and to our quality standards. The right candidate blends technical cooking ability with strong organizational skills and a genuine desire to develop a team.

CORE RESPONSIBILITIES

Inventory & Ordering • Conduct daily and weekly inventory counts for all food and dry goods • Place orders with vendors in accordance with par levels and projected volume • Monitor invoice accuracy and flag discrepancies to management • Maintain organized storage areas in compliance with food safety standards (FIFO) • Track waste and spoilage; implement corrective measures to reduce loss

Prep & Production Management • Generate accurate daily and weekly prep lists based on sales projections and on-hand inventory • Assign prep tasks to kitchen staff and ensure completion before service • Maintain consistent recipe adherence and portion standards across all shifts • Ensure mise en place is complete and organized for each service period

Scheduling • Build and publish weekly kitchen schedules that align labor to projected covers • Manage PTO requests, call-outs, and shift coverage in coordination with front-of-house management • Monitor and control overtime; adjust scheduling proactively to stay within labor targets

Line Operations • Work scheduled line shifts as an active contributor to service — this is a hands-on role • Expedite during peak periods to ensure ticket accuracy, timing, and plate presentation • Hold all kitchen staff accountable to station cleanliness and sanitation standards

Menu Development & Implementation • Collaborate with ownership and management on seasonal menu changes and specials • Develop and cost new recipes, ensuring target food cost percentages are maintained • Create and maintain accurate recipe cards for all menu items • Lead kitchen staff training when new items are introduced • Contribute ideas for LTOs, specials, and catering menu additions

QUALIFICATIONS

Required: • Minimum 2 years of kitchen management experience in a full-service or high-volume concept • Demonstrated ability to manage food and labor costs • Strong knowledge of food safety, sanitation, and HACCP principles • ServSafe Manager Certification (or ability to obtain within 90 days of hire) • Availability to work nights, weekends, and holidays

Preferred: • Experience in a multi-concept hospitality group • Background in recipe development and menu costing • Familiarity with Toast POS or similar systems • Culinary degree or equivalent professional training
