Full Job Description

1. POSITION SUMMARY

The Cook / Dietary Cook at Serenity Oaks IRF prepares nutritious, safe, and therapeutic meals and modified texture foods for rehabilitation inpatients in compliance with prescribed dietary orders, IDDSI standards, HACCP food safety principles, and facility recipes and menus. This role is a core contributor to the food and nutrition services operation and ensures that patients receive high-quality, appropriately prepared meals that support their recovery and nutritional needs throughout their inpatient stay.

2. ESSENTIAL FUNCTIONS & RESPONSIBILITIES

Prepare hot and cold menu items per facility recipes, dietary menus, and therapeutic diet specifications.
Prepare modified texture foods per IDDSI standards as directed by the Registered Dietitian.
Follow all HACCP food safety principles during food preparation, cooking, holding, and service.
Monitor and document internal food temperatures during cooking and holding; maintain HACCP temperature logs.
Assist with meal tray assembly and service line setup as directed.
Maintain kitchen sanitation and cleanliness during and after food production.
Properly store, label, and rotate food items per FIFO inventory management standards.
Operate commercial kitchen equipment safely; report malfunctions to the Food Service Director.
Assist with food receiving and storage; verify delivery accuracy and product quality.
Participate in food safety training and annual competency education.
Comply with all facility infection control and hand hygiene standards during food preparation.

3. EDUCATION & EXPERIENCE REQUIREMENTS

Required: High school diploma or GED.
Preferred: Culinary arts training, vocational cooking certificate, or equivalent experience.
Preferred: One (1) or more years of institutional cooking experience, preferably in healthcare.

4. LICENSURE, CERTIFICATION & REGISTRATION REQUIREMENTS

Required: ServSafe Food Handler certification or equivalent.
Required: Must comply with Louisiana Department of Health food handler requirements.

5. KNOWLEDGE, SKILLS & ABILITIES

Knowledge of institutional food preparation, recipe execution, and batch cooking.
Understanding of HACCP food safety principles and temperature control requirements.
Ability to prepare therapeutic and texture-modified foods per IDDSI standards.
Knowledge of proper food storage, labeling, and rotation practices.
Ability to operate commercial kitchen equipment safely.
Commitment to food quality, patient safety, and a sanitary kitchen environment.

6. PHYSICAL DEMANDS & WORKING CONDITIONS

Frequent standing throughout shift in kitchen environment; up to 12 hours.
Frequent lifting of food supplies and equipment up to 40 lbs.
Exposure to heat, steam, sharp utensils, and kitchen chemicals; PPE required.
