Job Overview
We are seeking a dedicated and skilled Prep Cook to join our culinary team. Step into an extraordinary opportunity to work alongside Chef Travis Swikard, one of San Diego’s most celebrated chefs. A San Diego native and alumni of Daniel Boulud’s Michelin-starred kitchens in New York City, Chef Travis returned home to open Callie, a nationally recognized restaurant celebrated by The New York Times, Esquire, and Michelin Guide for its soulful Mediterranean cuisine and dedication to craft. His latest project, Fleurette, brings refined French and Italian Riviera flavors to La Jolla, blending timeless technique, coastal elegance, and genuine hospitality.

As a Prep cook, you’ll be part of a tight-knit, passionate team that values precision, creativity, and continual growth. Working directly under Chef Swikard and his accomplished culinary leadership team, you’ll gain hands-on experience in every aspect of fine dining execution, from meticulous ingredient preparation and plating to understanding seasonal sourcing, balance, and flavor development. As a Prep Cook, you will play a crucial role in delivering high-quality meals while adhering to food safety standards. You will work closely with the kitchen staff to ensure that all dishes are prepared efficiently and to the highest standards. The ideal candidate will have a passion for food and a strong understanding of food safety and preparation techniques.

Responsibilities

Assist in the preparation of ingredients for meals, including washing, chopping, and measuring food items.
Follow recipes and portion control guidelines to ensure consistency in meal preparation.
Maintain cleanliness and organization of the kitchen workspace, adhering to food safety standards.
Support the culinary team with cooking tasks as needed, including grilling, sautéing, and baking.
Participate in menu planning by providing input on seasonal ingredients and dish ideas.
Collaborate with other kitchen staff to ensure timely service during peak hours.
Handle food items safely and responsibly, following all health regulations.
Assist with catering events as required, ensuring high-quality food presentation.

Requirements

Previous experience in a dietary department or as a dietary aide is preferred.
Familiarity with menu planning and meal preparation techniques.
Strong cooking skills with knowledge of various food service methods.
Experience in the restaurant or food industry is highly desirable.
Proficient knife skills and understanding of food handling practices.
Ability to work efficiently in a fast-paced kitchen environment.
Knowledge of food safety regulations and best practices.
Culinary experience is an asset but not mandatory; we are willing to train motivated candidates.
