Hemenway’s is looking for a Sushi & Raw Bar Cook to join the team.

Providence’s original downtown, riverside restaurant with a national reputation for serving only the freshest seafood while delivering genuine hospitality. For 30+ years, Hemenway’s has been a cherished and celebrated establishment that embodies the term Fresh; fresh top-of-the catch fin and shellfish, local farmed produce, crafted libations and unmatched city scape views. About the Position: In the Sushi & Raw Bar Cook role, you will be responsible for preparing and executing raw seafood dishes, focusing on sashimi, tartares, sushi rolls, and other creative raw fish presentations. This role blends artistry, precision, and technical expertise to enhance our menu offerings and deliver exceptional dining experiences.

About You: You are passionate about food. You have a strong sense of urgency, great organizational skills, and a positive attitude. Looking for someone who is passionate about working raw bar and is looking for a team-oriented environment. Someone to take the lead of a small raw bar team to help develop and grow with them.

Essential Duties:

Prepare sushi dishes, including rolls, sashimi, tartares, and nigiri, following established recipes and presentation standards.
Ability to shuck oysters and clams.
Ensure the quality and freshness of all raw ingredients, especially seafood.
Collaborate with kitchen staff to maintain smooth and efficient service operations.
Maintain cleanliness, organization, and safety in the sushi and raw bar station and kitchen.
Inspect and maintain sushi bar equipment, reporting any issues to management.
Follow food safety and sanitation protocols to meet the highest hygiene standards.
Engage with guests, as this is a guest-facing role, delivering exceptional service and fostering memorable dining experiences.
Work closely with the production team to ensure the sushi station is prepared for service.
Produce sushi rice daily, ensuring proper preparation and quality.

Qualifications:

Must have flexible schedule to work during days, nights, weekends, and some holidays as needed
Prior experience a plus but not required

Skills & Abilities:

Must be able to stand for long periods of time
Ability to lift and move 25-50 pounds
Be collaborative, using a team approach to creating an equitable workplace environment and have respectful working relationships
