About Maroma

Maroma is an exciting new upscale Mexican coastal dining concept that opening in May of 2026. Inspired by the vibrant flavors of Mexico’s coastline— Maroma will showcase fresh seafood, wood-fire techniques, bold yet refined flavors, and a modern approach to regional Mexican cuisine. We aim to create an elevated yet welcoming dining experience with high culinary standards and exceptional hospitality.

Position Overview
We are seeking an experienced and passionate Executive Chef to lead our culinary operations at Maroma. This individual will bring creativity, leadership, and operational excellence to our kitchen—setting the tone for an exceptional food culture rooted in consistency, precision, and innovation. The Executive Chef will play a vital role in menu development, team training, and ensuring flawless execution of our culinary vision.

Key Responsibilities

Oversee all kitchen operations, including production, quality, and presentation.
Lead, train, and mentor a high-performing culinary team focused on excellence and consistency.
Collaborate with ownership and management on menu development and seasonal changes.
Manage food and labor costs, ensuring profitability without compromising quality.
Maintain impeccable cleanliness, organization, and safety standards in compliance with health regulations.
Foster a positive and professional kitchen culture built on teamwork, accountability, and respect.
Source premium ingredients and maintain strong relationships with purveyors and local partners.
Uphold brand standards and contribute to the ongoing success of the concept.

Qualifications

Minimum 5 years of experience as an Executive Chef or CDC in an upscale, full-service Latin concept.
Strong culinary foundation with expertise in seafood and coastal cuisine preferred.
Proven track record of managing high-volume kitchens with excellence.
Exceptional leadership, communication, and organizational skills.
Strong financial acumen and understanding of cost controls.
Passion for hospitality and a commitment to guest satisfaction.
Culinary degree or equivalent experience preferred.
