Assistant Restaurant Manager, Kitchen Operations

Location: VUKA, 626 W Lake Street, Minneapolis, MN
Employment Type: Full-time
Pay: $22 to $24 per hour, based on experience
Classification: Hourly, nonexempt and overtime eligible
Schedule: Must be available for a mix of opening, closing, weekend and holiday shifts based on business needs
Reports To: Ownership

About the Role

VUKA is a new flame-grilled peri peri restaurant preparing to open in Minneapolis’s Lyn-Lake neighborhood.

We are seeking a hands-on Assistant Restaurant Manager to help launch the restaurant, train the team and establish a consistent daily operation.

This role has primary responsibility for kitchen readiness, food execution and shift leadership. Before service, the manager will lead preparation and confirm that the kitchen is ready. During service, the manager will direct the flow of the restaurant across the kitchen, expo, ordering area and dining room.

This is not an office-based position or an executive chef role. The successful candidate must be comfortable working alongside the team, directing busy shifts and stepping into kitchen or guest-facing positions when needed.

Primary Responsibilities

Opening and Restaurant Readiness

Help prepare the restaurant and team for opening.
Train employees on approved recipes, stations, service procedures and safety standards.
Help establish prep sheets, production pars, station assignments and opening and closing checklists.
Confirm that food, sauces, sides, equipment and supplies are ready before service.
Identify operating problems and recommend practical corrections.

Kitchen Operations and Food Quality

Direct daily food preparation and station setup.
Maintain approved recipes, portions, cooking methods and presentation standards.
Monitor grill production, batch timing, food quality and ticket times.
Work kitchen stations when service conditions require additional support.
Reduce waste, spoilage, overproduction and unnecessary remakes.
Maintain a clean, organized and service-ready kitchen.

Shift and Guest Service Leadership

Serve as manager on duty during assigned shifts.
Direct service across the kitchen, expo, ordering area and dining room.
Coordinate dine-in, takeout, online and delivery orders.
Monitor order accuracy, service speed and guest wait times.
Position employees based on demand and respond quickly to bottlenecks.
Resolve guest concerns professionally and promptly.
Maintain restaurant cleanliness and presentation throughout the shift.
Complete opening, closing and shift-control procedures.

Food Safety and Compliance

Maintain food-safety, sanitation and personal-hygiene standards.
Supervise safe receiving, storage, preparation, cooking, holding and cooling practices.
Maintain required temperature, cleaning and sanitation records.
Prevent cross-contamination and allergen-related risks.
Ensure safe handling of raw chicken and ready-to-eat food.
Correct unsafe practices immediately.
Keep the restaurant prepared for health and safety inspections.

Team Leadership

Assist ownership with recruiting and selecting team members.
Onboard, train and cross-train employees.
Conduct pre-shift meetings and assign station responsibilities.
Coach employees on food quality, speed, cleanliness, hospitality and teamwork.
Address attendance and performance concerns promptly.
Document significant performance or conduct issues for ownership review.
Help develop capable employees into shift-lead responsibilities.
Maintain a respectful and accountable workplace.

Labor, Inventory and Operating Controls

Prepare staffing schedules for ownership approval.
Adjust employee deployment based on service demand.
Monitor attendance, breaks, overtime and labor usage.
Assist with ordering, receiving and inventory counts.
Maintain appropriate preparation and inventory par levels.
Track waste, remakes and unusual inventory variances.
Protect approved recipes and portion standards.
Use Toast and other restaurant systems accurately.
Maintain manager logs, shift notes and incident records.
Report equipment, staffing, maintenance and supply issues promptly.

The Assistant Restaurant Manager will help VUKA establish:

A trained, dependable and cross-functional team.
Effective coordination between kitchen and guest-facing operations.
Controlled labor, inventory and food waste.
Shifts that operate consistently without continuous owner intervention.

Required Qualifications

At least three years of restaurant or food-service experience.
At least one year in a restaurant leadership, kitchen leadership or manager-on-duty role.
Experience training and directing restaurant employees.
Ability to work both kitchen and guest-facing restaurant positions when needed.
Working knowledge of restaurant food-safety and sanitation requirements.
Availability for a mix of opening, closing, weekend and holiday shifts.
Ability to stand and move for extended periods.
Ability to lift and carry up to 50 pounds when required.
Consistent and dependable attendance.
Current Minnesota Certified Food Protection Manager certification preferred. Ability to obtain certification within 60 days of hire is required.

Preferred Qualifications

Experience helping open or stabilize a restaurant.
Fast-casual, counter-service, grilled-food or high-volume restaurant experience.
Experience supervising both front-of-house and back-of-house employees.
Experience with inventory, ordering, labor control or food-cost management.
Experience using Toast or a comparable restaurant POS system.
Experience developing prep sheets, pars, checklists or training materials.

A culinary degree is not required. Demonstrated restaurant leadership, kitchen competence and operating ability are more important than formal credentials.
