Minor Ingredient Operators are responsible for the accurate weighing of ingredients. They are required to accurately and legibly complete all quality records and maintain the identification and traceability of all ingredients at all times.
PRINCIPAL RESPONSIBILITIES
Principal responsibilities include but are not limited to:
- Obtain a schedule and check for ingredients to prepare
- Request raw materials from ingredient’s warehouse
- Adequately rotate raw materials according to acquisition date
- Fill up raw material containers and maintain their lids close to avoid any type of contamination and/or mixing with other ingredients.
- Allergen ingredients must be kept separate form the rest of the ingredients. Batches made need to go on a separate blue pallet, blue identifying allergen.
- Hands must be washed when completing an allergen product and changing to a non-allergen product or a different type of allergen.
- Inspect ingredients after dumping for any possible contaminates like paper after cutting the bag open etc.
- Maintain identification of ingredients and lot numbers at all times to guarantee traceability.
- Make sure ingredient barrels are in good condition including lids. Lids must be checked for cracks. 10. Weigh ingredients according to specifications and work instructions
- Avoid cross contamination of ingredients by using good work practices.
- Maintain work area clean including scales.
- Verify scales operations and calibration.
- Complete all necessary paper-work, forms, quality records and, identification cards according to specification and, work instructions or supervisor’s directions
- Perform all duties following GMP’s and Safety Rules
- Use appropriate materials provided by the company at all times (knifes, scoops, plastic pallets, etc.) and use blue color for allergen products to avoid product contamination
- Perform inventories
- Complete forms in legible accurate manner
- Assist on recalls
- File paperwork effectively
- Interact with Bakers
- Assess production needs based on schedules
- Have good communication with peers and develop work plans with minimal supervision
- Attend to safety and quality meetings.
- Be prepare to cover other positions assigned by Supervisors or Leads
- Follow company regulations.
- Keep door looked when room is not in use.

PHYSICAL REQUIREMENTS: The following constitute the minimal physical requirement.
- Be able to lift, pull, push at least 50 Lb
- Be on his/her feet for long periods of time
- Able to walk long distances
- Kneel, bend, grab, reach, pinch, fold, pick and crawl
- Able to work in dusty, noisy, cold environment including small areas
- Able to wear safety equipment for prolonged periods of time, (safety glasses, respirators or dust masks, gloves, aprons, earplugs, face shields, etc)
- Able to work in temperatures between 40 to 105 F
EDUCATION AND EXPERIENCE
- Good math skills
- Good hand writing and filing techniques
- Able to use self discipline, apply it to the daily activities and completion of quality records
- 6 months in a tortilla manufacturing plant, bakery or food plant
