Passador (Meat Carver) – Job Description
A Passador is responsible for preparing, seasoning, and serving meats in the traditional Brazilian steakhouse style. This role combines culinary skill with outstanding guest service by expertly carving meats tableside while creating an exceptional dining experience for guests. Passadors are valued members of the service team and are compensated similarly to servers based on experience, performance, and service standards.
NO EXPERIENCE AS A MEAT SERVER? No problem. We are willing to train motivated individuals to become successful Passadors. Training will include meat preparation, carving techniques, menu knowledge, and customer service standards.
Key Responsibilities
- Marinate, season, and prepare various cuts of meat according to restaurant recipes and standards.
- Skewer and cook meats using Brazilian churrasco techniques.
- Carve and serve meats tableside in a professional and courteous manner.
- Explain meat selections, cooking styles, and specialty items to guests.
- Maintain full knowledge of all meat offerings, side dishes, and menu items.
- Deliver exceptional customer service and create a welcoming dining experience.
- Monitor meat quality, temperature, and presentation throughout service.
- Work closely with kitchen and dining room staff to ensure smooth and efficient operations.
- Follow all food safety, sanitation, and hygiene standards.
- Assist with cleaning, organizing, and maintaining kitchen and serving areas.
Qualifications
- Previous restaurant, churrascaria, or meat carving experience preferred but not required.
- Knowledge of different cuts of beef, pork, lamb, chicken, and specialty meats is a plus.
- Strong communication and guest service skills.
- Ability to work in a fast-paced, team-oriented environment.
- Professional appearance and positive attitude.
- Flexible schedule, including evenings, weekends, and holidays.
- Ability to stand for long periods and lift heavy items when necessary.
