BAR MANAGER
This job description outlines the primary duties and responsibilities of the role; however, it is not intended to be an exhaustive list. Duties, responsibilities, and expectations may be modified, added, or removed.
Sales Performance & Profitability
Drive top-line sales growth and overall bar profitability
Manage alcohol and bar labor costs at or below budget
Develop strategies to increase check averages, leveraging upselling techniques, staff training, and promotional campaigns.
Lead ongoing staff education focused on cocktails, wine, beer, menu knowledge, and guest engagement
Design promotional beverage programs, including feature cocktails, seasonal specials, staff incentives, and inventory optimization strategies
Analyze beverage sales trends, PMIX Reports, and menu performance to identify growth and margin opportunities and margin improvements
Restaurant & Bar Operations
Place weekly orders for liquor, beer, wine, non-alcoholic beverages, and dry goods
Monitor inventory levels closely; audit pricing and work proactively with vendors to secure best pricing, incentives, allocations, and placement support
Oversee the batching program to ensure consistency, efficiency, and proper execution
Ensure all inventory items are accurately costed and maintained in Radar
Verify all deliveries for accuracy and follow up on discrepancies immediately
Monitor waste, breakage; enforce pour standards and recipe compliance
Maintain organization of all bar storage areas, including walk-ins, liquor cages, and attic storage
Oversee bar equipment maintenance and supply ordering; coordinate repairs with Micah or approved vendors with General Manager approval
Maintain and update bar manuals, recipes, prep guides, and steps of service
Maintain proficiency in Toast, OpenTable, Radar, Ottimate, Perfect Venue, and Canva
Ensure opening and closing procedures are followed and all bar operations meet health department, sanitation, and food safety standards
Promote sustainability through responsible use of energy, water, recycling, and reusables
Maintain brand standards across cocktails, presentation, glassware, and service execution
Scheduling, Labor & Team Development
Forecast bar labor in Radar and post schedules at least two weeks in advance
Interview, hire, onboard, train, mentor, and evaluate bar team members
Ensure completion of all required training and certifications for new hires
Conduct 90-day and annual performance reviews and support career development
Monitor staff morale and address concerns proactively to maintain a positive workplace culture
Ensure compliance with California labor laws; consult the General Manager, Operations Team and HR when clarification is needed
Responsible Alcohol Service & Compliance
Enforce responsible alcohol service standards, including proper ID checks
Ensure compliance with ABC regulations and company alcohol policies
Maintain oversight of RBS certification requirements and staff compliance
Address alcohol-related incidents professionally and complete all required documentation
Administrative Responsibilities
Review and respond to Slack communications
Monitor upcoming events in Perfect Venue with a two-week outlook and adjust orders and schedules as needed
Approve and code invoices in Ottimate; follow up on missing or past-due invoices with vendors and Accounts Payable
Ensure W-9s and Certificates of Insurance are obtained for all new vendors
Review labor reports, bar sales, and performance metrics in advance of management meetings
Attend weekly management meetings and report on bar labor, sales, and operational needs
Maintain regular communication with AMP Services to support weekly accounting processes
Plan at least one quarterly bar-focused event to increase sales and brand presence
Review BEOs in advance to ensure product ordering and staffing levels are appropriate and timely
Build and maintain strong relationships with vendors and distributor representatives
Review preliminary financial analyses and post any updates or changes in the Slack channel
Respond to guest or employee injuries by following SOPs outlined in the Intranet and completing all required documentation
Menu Development & Seasonal Menu Changes
Coordinate tastings with vendors prior to menu changes; otherwise limit tastings
Ensure cocktail, wine, and beer programs are fully developed, cohesive, and aligned with brand standards
Update Toast buttons, website and printed menus, training materials, and Canva assets
Distribute recipes, prep guides, and documentation to staff a month before launching a new menu
Submit the monthly beverage tests to the General Manager for review
Inventory, Cost Controls & Systems
Set up inventory management system (pars, counts, variance tracking)
Implement procedures for waste, breakage, comps, and theft prevention
Create standardized recipes, specs, and yield expectations
Cost menu items below budget
Staffing & Training
Interview, onboard and train bar staff
Develop training materials including recipes, service standards, and safety protocols
Certify staff on responsible alcohol service (RBS/ABC requirements)
Service Standards & Guest Experience
Define bar service flow, ticket times, and guest interaction standards
Ensure consistent execution of recipes, garnishes, and presentation
Align beverage program with culinary offerings and pairings
Inventory Management
Update inventory sheets weekly with purchases and pricing changes
Submit new inventory items in the inventory Slack channel with all required information
Enter inventory counts into Radar by Thursday following period end
Review inventory results for discrepancies, pricing errors, and variance issues
Hospitality
Maintain a strong presence behind the bar; ensure all guests are acknowledged
Focus on flawless execution and a smooth restaurant flow
Strive for 5-star ratings on Guest Service Feedback, Yelp, Google, and OpenTable; following up on unsatisfactory reviews promptly
Lead by example—hospitality starts with us; a hospitable leader cultivates a hospitable team

Opening Responsibilities
Pre-Opening — By The Sea
Develop beverage menu in alignment with the restaurant’s brand
Cost all beverage items to ensure it meets budget
Ensure all beverage recipes are fully documented and that clear recipe pamphlets and batching guides are created
Work with vendors, distributors, and reps to set up accounts
Build bar equipment list and glassware which must be approved by the Operation Team
Establish par levels, ordering systems, and inventory processes
Create job descriptions and training manuals
Hire, train, and schedule bar staff with continued staff education and preshifts
Create bar SOPs (recipes, service standards, opening/closing duties)
Build the inventory storage locations in Radar
Pay: $70,304.00 - $75,000.00 per year
