Grill Chef (Charcoal Grill / Yakitori)Job Overview

Chubby Don is looking for a passionate and skilled Grill Chef to join our opening team. As a Grill Chef, you will specialize in traditional Japanese-style charcoal grilling, preparing premium yakitori, charcoal-grilled hamburger steaks, skewers, and other grilled specialties over binchotan-style charcoal.

This role requires precision, consistency, and attention to detail. You will be responsible for controlling charcoal heat, monitoring cooking times, and delivering every dish with exceptional flavor and presentation. If you enjoy live-fire cooking and take pride in craftsmanship, we'd love to have you on our team.

Responsibilities

Prepare and grill yakitori, charcoal-grilled hamburger steaks, skewers, vegetables, and other menu items over charcoal.
Master charcoal fire management, including heat control, timing, and cooking temperatures.
Maintain consistency in seasoning, portioning, and presentation according to Chubby Don standards.
Prepare meats, sauces, and ingredients before service.
Follow all food safety, sanitation, and kitchen cleanliness procedures.
Monitor inventory and communicate prep needs to the kitchen team.
Work efficiently during busy service while maintaining food quality.
Collaborate with the BOH team to ensure smooth kitchen operations.
Maintain and clean charcoal grills and cooking equipment at the end of each shift.
Continuously improve grilling techniques and contribute to maintaining Chubby Don's high culinary standards.

Qualifications

Previous experience as a Grill Chef, Line Cook, Yakitori Chef, Robata Chef, or similar position preferred.
Experience cooking with charcoal grills or live-fire cooking is highly preferred.
Passion for Japanese cuisine and charcoal grilling.
Strong understanding of food safety and sanitation practices.
Excellent knife skills and food preparation techniques.
Ability to work in a fast-paced, high-volume restaurant.
Team player with a positive attitude and strong work ethic.
Ability to stand for extended periods and work in a hot kitchen environment.
Open to training and learning Chubby Don's grilling techniques and recipes.
