Full Job Description

Looking for a Epicurean Pub Lead Line Cook (emphasis on sautee) in the upstate of South Carolina (USA). Experience in British Isles & Southern Heritage Cooking helpful, but not entirely necessary. Ideal candidate could be promoted to Sous Chef quickly after training.

An independently owned Scot-Irish Pub located in Anderson, SC in successful operation since 1997. Our staff is managed by a Chef/owner with over 30 years experience implementing the highest professional conduct & cooking standards. This food-focused pub is a great place for culinary career enhancement. A 2+ year commitment gets you all the perks of a large company without the corporate stress level. We are a family friendly work place * No required over time (38 hours per week max with the exception of St. Patrick's Day week) * 2 consecutive days off per week (Mon/Tue) * all major holidays off (Thanksgiving Day, Christmas Eve, Christmas Day, New Year's Day, 4th of July) * 3 weeks vacation annually (details will be discussed).

Our pub is located in a geographically beautiful part of the country.....lots of outdoor activities, low cost of living, seasonal variety, major lake in our county, & close to beaches, mountains, & the metro areas of Charlotte, NC & Atlanta, GA.........a great home base.

Position Reports to: Head Chef, or Kitchen Manager

Subordinate Staff: Line Cook 2 / Expo / Salad-Dessert Maker / Kitchen Aide

· Works with Head Chef, Sous Chef, Line Cooks, & Kitchen Aide/Dishwasher (5 person kitchen crew)

· Should be a proficient Rounds-person at all stations: Fry, Grill, Sautee, Salad/Dessert, or Expo during heavy weekend volume.

· Should be able to close on slower nights with Kitchen Aide & MOD assistance.

· When closing, kitchen should be left properly cleaned, sanitized, & stocked for opening shift the next day

Summary of Position:

Accurately and efficiently cook meats, fish, vegetables, soups and other hot food products as well as prepare and portion food products prior to cooking. Also perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.

Duties & Responsibilities:

* Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.

* Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.

* Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.

* Portions food products prior to cooking according to standard portion sizes and recipe specifications.

* Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment.

* Prepares item for broiling, grilling, frying, sautée, or other cooking methods by portioning, battering, breading, seasoning and/or marinating.

* Follows proper plate presentation and garnish set up for all dishes.

* Handles, stores and rotates all products properly.

* Assists in food prep assignments during off-peak periods as needed.

* Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.

* Attends all scheduled employee meetings and brings suggestions for improvement.

* Performs other related duties as assigned by the Kitchen Manager or manager-on-duty.

Qualifications:

A minimum of 1 year of sautee station experience and 3 years kitchen preparation and cooking.
Basic professional knifes skills needed.
Must be able to communicate clearly with managers, kitchen and dining room personnel.
Be able to reach, bend, stoop and frequently lift up to 40 pounds.
Must be able to multi-task under pressure & work with a “sense of urgency” at all times.
Be able to work in a standing position for long periods of time (up to 5 hours at a time).
Formal Culinary training or education is helpful, but equivalent experience and/or knowledge & skill level is acceptable.
Serve Safe Certification knowledge required. If certificate is expired, must be willing to make current.
