Full Job Description

POSITION SUMMARY: You are a vital part of a team that delivers exceptional food and service. Pride in your work will show in your performance. Efficiency, speed, attention to detail, and self-motivation are very important.

Busser

Pre-bussing:

● Remove excess items from the table ASAP, including: bread plates, silverware, empty bottles, empty glasses, ramekins, trash, food particles, etc.

● Entrée plates: pre-buss only those that have been pushed to the side, otherwise wait to bus plates until all guests have finished their meal. Always ask, “May I clear your plate?” before reaching for it. Be aware of the guests’ personal space.

● Use a clean napkin to wipe off food, sauces, etc.- anything dirty on the table. Do not use a towel from the bus station.

Bussing:

● Bus and reset tables for the host team after the guest has left.

● Your responsibilities are to maintain the table by clearing & resetting tables, delivering water & bread as requested, refilling water, ice tea and coffee, as needed throughout their dining experience. Clearing and Setting Tables:

● Bring a tray when bussing tables unless there are just a few things that you can fit everything in your hands without stacking glasses.

● Clear everything and stack safely, i.e. clear the ramekins, silverware, and food off plates before stacking. Put the silverware in one area or glass to save you time when you get to the dish room. DO NOT pick glasses up by the rims with your fingers.

● When you finish putting everything on your tray, wipe all food, trash, etc. from the table onto your tray; wipe the table thoroughly leaving it clean but not wet.

● Drop everything off in the dish pit in its appropriate location. Please be mindful of assisting the dishwasher in maintaining a safe, respectful, clean and efficient workspace.

● Get your set ups (silverware, tablecloth, break plates) and set the table neat and straight including the tablecloths which should be seam side down. Plan for the maximum occupancy of each table (i.e. 4 settings for 4 tops), unless advised differently by the host.

● Sweep up messes on the floor as needed. Pick up trash or napkins on the floor. Refilling Drinks (water, coffee, ice, etc.):

● Be aware of when guests need a new water bottle & refill glasses as needed.

Be Proactive:

● Check the server sections so you know who has which tables

● Whenever you have a spare second ask the servers if you can do anything for them.

● Be aware of where each table is, meaning which course they are on, if the appetizer plates need to be cleared, if they need new silverware, etc.

● Be able to see everything as you traverse the dining room. You should see water glasses, sodas, iced tea, and all drinks that get refills.

Food Running

DUTIES AND RESPONSIBILITIES:

● Organize the food by order to ensure quality and accuracy

● Read tickets and run food to correct table and seat numbers

● Facilitate communication between the kitchen and the service staff

● Ensure food is prepared and served in a timely manner. Watch ticket times and communicate long ticket times with the lead line cook

● Communicate with management and servers regarding menu changes throughout service (86ed items, countdowns, etc)

● Notify servers when needing assistance with food pick up and delivery

● Ensure setup and breakdown of food runner station at the beginning and end of each shift
