Position Summary

The Sous Chef is responsible for supporting the Executive Chef in the daily operation of a high-volume, fine dining à la carte kitchen. This role ensures consistent preparation and presentation of exceptional cuisine while maintaining the highest standards of food quality, sanitation, cost control, and team performance. The Sous Chef leads by example, supervises culinary staff, and helps create an outstanding dining experience for every guest.

Key Responsibilities

· Assist the Executive Chef in the daily operation of the fine dining à la carte kitchen.

· Supervise and lead kitchen staff during service, ensuring efficient workflow and timely execution of orders.

· Prepare, cook, and plate menu items according to established recipes and presentation standards.

· Ensure consistency in food quality, taste, portioning, and presentation.

· Train, mentor, coach, and evaluate culinary team members to maintain high performance standards.

· Oversee daily production, prep schedules, and station organization.

· Maintain a clean, organized, and sanitary kitchen in compliance with all local health department regulations.

· Monitor food quality, freshness, storage, labeling, and rotation using FIFO procedures.

· Assist with menu development, seasonal specials, and recipe testing.

· Monitor food, labor, and operating costs while minimizing waste.

· Assist with purchasing, receiving, inventory management, and product quality control.

· Ensure proper maintenance and safe operation of kitchen equipment.

· Enforce food safety, sanitation, and workplace safety procedures.

· Collaborate with the front-of-house management team to ensure exceptional guest satisfaction.

· Assist with scheduling and managing labor to meet business needs.

· Support other members of the culinary team as needed.

Candidate Qualifications

· Culinary degree or equivalent combination of education and experience required.

· Minimum of 3–5 years of progressive culinary experience in a fine dining environment.

· Previous experience as a Sous Chef or Chef in a fine dining à la carte restaurant required.

· Experience managing high-volume dining service while maintaining exceptional quality.

· Previous supervisory experience leading and developing culinary teams.

· Experience managing a unionized workforce is highly preferred.

· Experience with purchasing, receiving, inventory control, and food cost management preferred.

· Menu development and seasonal menu planning experience is a plus.

· Valid NYDOH Food Handler's Certificate required.

· Strong knowledge of classic and contemporary cooking techniques.

· Proficiency in food safety and sanitation standards.

Compensation & Benefits

This position offers a competitive salary, commensurate with experience and qualifications. The Club provides comprehensive medical, dental, and vision insurance coverage, along with generous paid time including vacation, personal days, holidays, and sick leave. Additional benefits include short-term and long-term disability coverage and a 401(k)-retirement plan with a Club contribution. The role is also eligible for holiday bonus.
